ISLAND CHICKEN image

Yield 4 people

Number Of Ingredients 10

1 to 3 lbs chicken
1/3 cup soy sauce
2 Tbsp lemon juice
1 Tsp ginger
1 Tsp sage
salt & pepper to taste
flour for dredging
1/2 cup oil
1 large onion thinly sliced
1 cup boiling water

Steps:

  • In small bowl mix soy, lemon, sage, salt & pepper. Put chicken in lge shallow baking dish & pour soy & spices over chicken. Marinate for minimum 1 hour in fridge turning chicken once or twice. Lightly dredge chicken pieces in flour & brown in frying pan. Transfer chicken to lge shallow baking dish, skin side up. Pour boiling water in side of dish. Add onion & marinade sauce. Bake covered at 350 degrees for 1 hour. Enjoy!
