Yield 4-6 Sundried Tomato Wrap

Number Of Ingredients 10

2 pkgs. (pre-cooked) grilled Italian style chicken breast, chopped
1/3 Cup Extra Virgin Olive Oil
1 Tablespoon Garlic, minced
1/2 Cup Sundried Tomatoes, chopped
1/2 Cup Black Olives, chopped
1/4 Cup Fresh Italian Herbs, minced
1/4 Cup Capers
1/2 Cup Feta Cheese, crumbled
1 teaspoon fresh cracked Black Pepper
Kosher Salt, to taste

Steps:

  • Chop the chicken. Throw all the ingredients together in a mixing bowl, making sure all the flavors are distributed evenly. Lay the tortillas on a flat work surface and divide the mixture among them. Roll them tightly securing both ends. When you are ready to serve them, slice on a bias. Note: you can use grilled chicken or any of the precooked chicken breast products. I have also used pita pockets instead of tortillas. I like the tortillas better.

Meh. I wasn't impressed with this Italian chicken wrap. The chicken was dry and flavorless, and the pesto was bland. I won't be making this again.

Pretty good, but I would have liked more pesto. The chicken was a bit dry, but the flavors were great. I'll definitely try this again, but I'll add more pesto and maybe some grilled vegetables.

Loved it! I've made this Italian chicken wrap a few times now, and it's always a hit. The chicken is always moist and flavorful, and the pesto, sun-dried tomatoes, and mozzarella are a great combination. It's also a really easy recipe to follow.
