MANDEL BREAD image

3 eggs
1 c sugar
1 c extra light olive oil
1 ½ c flour
2 tsp almond extract
½ tsp salt
1 c sliced or slivered almonds
¾ c chocolate chips
cinnamon-sugar

Steps:

  • Beat eggs well. Slowly add sugar. Add oil. Then add flour. Add the rest of the ingredients. Let the mixture sit for at least an hour. Preheat oven to 350˚ Form the mixture into two loaves on baking pan lined with parchment paper or non-stick aluminum foil. Sprinkle with cinnamon-sugar and bake for 30 minutes. Remove from oven and with a sharp knife, cut the loaves in slices. Place the pieces one side down on the baking pan and bake for 10 minutes. Repeat with the other side for an additional 10 minutes. Notes: Any vegetable oil will work. I like cooking with olive oil If you want a crispier, biscotti-like texture, bake each side an additional 5 minutes An easy way to form the loaves is by using old-fashioned metal ice trays without the inserts. Line them with parchment paper or foil and the loaves will easily lift out for slicing.
