Mock French Toast image

Number Of Ingredients 8

4 eggs
2 tablespoons olive oil
2 tablespoons water
1/2 cup soy flour
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 cup maple syrup

Steps:

  • 1. Beat eggs with oil and water. Stir dry ingredients together and beat into egg mixture until blended.2. Bake in a greased bread pan at 350° F for 50 minutes or until it looks set. Cut it into pieces and eat it with 1/4 cup sugar-free Vermont Maple Syrup
