Steps:
- Bring all ingredients to room temperature. Preheat oven to 375 F. For the crust, roll graham crackers into crumbs. Combine with melted butter and sugar. Press into 9" pie pan. For the filling, beat eggs at high speed, gradually beating in sugar. Add cheese and vanilla and mix thoroughly at low speed. Pour into crust and sprinkle with cinnamon. Bake for 20 minutes at 375 F. Allow to cool, then add topping. For the topping, mix sour cream, sugar, and vanilla at low speed. Spread over baked filling and bake for 6 minutes at 400 F. Allow pie to cool, then refrigerate before serving.
