MOM'S STUFFED PEPPERS image

Yield 6 servings 1 pepper per serving

Number Of Ingredients 15

1 med. onion, chopped
1 clove garlice, minced
2 cans tomato puree
1 15-oz tomato paste
1 can tomato soup
1 cup water
salt and pepper to season
fresh or dried oregano
1-1/4 lbs. grass fed beef or bison
3/4 c bread crumbs
1/2 c uncooked rice
1 tsp. salt
1/4 lb. ground pork
1 beaten egg
1 med. chopped onion

Steps:

  • Saute onion and garlic till golden. Add tomato puree, paste, soup, water, and seasonings. Bring to boiling, simmer 1.5 hours. Meanwhile combine pork, bread crumbs, egg, rice, onions, and salt. Cook peppers 5 minutes and stuff with meat mixture. Place in casserole and bake at 350 for 1.5 hours, basting three or four times.

I followed the recipe exactly and the peppers turned out a little bland. I think next time I'll add some more seasoning to the filling.
