Orange Slice Cookies image

This was my great aunt Merline's recipe. My kids love these cookies at Christmas time.

Number Of Ingredients 12

1 c sugar
1 c shortening
1 c packed brown sugar
2 eggs
1 tsp vanilla
2 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 c quick cooking rolled oats
2 c (12 oz.) candy orange slices
1 c flaked coconut

Steps:

  • 1. Cut orange slices into pieces. The easiest way is to snip them with kitchen shears.
  • 2. In a large mixer bowl, cream together sugar, brown sugar and shortening until until fluffy.
  • 3. Add eggs and vanilla and mix well.
  • 4. Stir together flour, baking powder, baking soda and salt.
  • 5. Stir the dry ingredients into the creamed mixture mixing well.
  • 6. stir in candy and coconut.
  • 7. Using about 1 Tbsp. mixture for each, roll into 1 inch balls.
  • 8. Place the balls on a cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until lightly browned.
  • 9. Remove from sheet and cool on a wire rack.

I followed the recipe exactly and the cookies turned out terrible. They were dry and crumbly and the glaze was too runny.

These cookies were a bit too sweet for my taste, but my kids loved them. I think I'll try reducing the amount of sugar next time I make them.
