PEKING HOUSE SPECIAL FRIED RICE

Peking House Special Fried Rice image

This comes from the Peking House restaurant in Green Bay, Wisconsin. Easily adaptable to what you have on hand, including any meat you like, or use tofu. The cook times are approximate since none were given. It cooks fast, though, if you are using all leftover rice, eggs, and meat, which this recipe assumes. If you have to cook the meat, scramble eggs, etc. then it will take longer. It's best to use leftover rice.

This fried rice was a disaster! The rice was mushy, and the vegetables were overcooked.

I'm not sure what I did wrong, but my fried rice turned out a little bland. I think I'll try adding more soy sauce next time.

This fried rice is a bit spicy for my taste, but I still enjoyed it. I just added less chili pepper next time.

I'm a vegetarian, so I made this fried rice with tofu instead of chicken. It was still delicious!

This fried rice is a great way to use up leftover chicken. It's also a great way to get your kids to eat their chicken.
