Pumpkin Cookies image

My families favorite. This makes a great PTA fundraising cookie

Number Of Ingredients 13

1 c margarine
3 c sugar
2 large eggs
1 can(s) 16 oz pumpkin
2 tsp vanilla extract
5 c all purpose flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
3 tsp nutmeg
3 tsp cinnamon
1 c chopped nuts
1 pkg 12 oz chocolate chips

Steps:

  • 1. Preheat oven at 350*
  • 2. Cream margarine and sugar together until light and fluffy. Beat in egg, pumpkin and vanilla. Mix together flour, baking powder, baking soda, salt and spices. Add to creamed mixture. Mix well. Add nuts and chocolate chips and mix well. Drop from a rounded teaspoon onto a greased cookie sheet. Bake for 15 minutes.
  • 3. Note: Raisins may be used in place of chocolate chips. Baked cookies freeze well.
