Raspberry Bar Cookies, Barb image

A layered bar cookie with raspberry in the middle.

Number Of Ingredients 13

LAYER 1
1 c flour
1 tsp powder
1/2 c butter
1 egg, beaten
1 Tbsp milk
10 oz raspberry preserves (or other flavor if you want)
LAYER 2
1 c sugar
1 Tbsp butter
1 egg, beaten
2 c coconut (fine cut)
1 tsp vanilla

Steps:

  • 1. Mix all but preserves from layer 1. Press into bottom of 9x13 sprayed with PAM. Spread preserves on top. Mix all for layer 2 together. Spread on top of the preserves. Bake at 275 degrees 25-30 min.
