Slow Cooker Breakfast Cobbler image

Semi-healthy fruit cobbler, perfect for breakfast. You can substitute the fruits in this recipe for other fresh, seasonal fruits of your choice. This also makes a great dessert, topped with vanilla ice cream or whipped cream.

5 apples - peeled, cored, and diced
2 pears - peeled, cored, and diced
½ cup fresh blueberries
½ cup fresh blackberries
½ cup agave nectar
1 tablespoon cornstarch
1 tablespoon lime juice
1 tablespoon brandy-based orange liqueur (such as Grand Marnier®)
1 teaspoon vanilla extract
½ teaspoon ground ginger
½ teaspoon ground cinnamon
1 cup all-purpose flour
1 cup pecan pieces
½ cup turbinado sugar
½ cup rolled oats
½ cup butter, cut into small pieces
¼ cup ground flax seeds
½ teaspoon ground cinnamon
¼ teaspoon sea salt

Steps:

  • Combine apples, pears, blueberries, blackberries, agave, cornstarch, lime juice, orange liqueur, vanilla extract, ginger, and cinnamon in a slow cooker. Stir to combine.
  • Place flour, pecans, sugar, oats, butter, ground flax seeds, cinnamon, and salt in a bowl or resealable plastic bag. Crumble mixture with a fork, your fingers, or a pastry blender. Pour over fruit mixture in the slow cooker.
  • Cover and cook on Low until cooked through and top is golden, 8 hours to overnight.
