This is my version of an easy, healthy, one pot meal. It works great with a head of chopped cabbage also. I serve it with cottage cheese.

Time 35m

Yield 6 serving(s)

Number Of Ingredients 10

1 lb lean ground beef or 1 lb ground turkey
2 lbs medium zucchini, approx. 9, cut in 1/4-inch half circles
1 green bell pepper, chopped
1 large white onion, chopped
2 garlic cloves, minced
1 (26 ounce) jar spaghetti sauce, your choice
1 teaspoon garlic powder
1 teaspoon dried sweet basil leaves
1/2 teaspoon ground black pepper
salt

Steps:

  • Brown ground beef with onion and bell pepper in a large skillet or pot with lid. Drain grease.
  • Add garlic and seasonings. Stir.
  • Add zucchini and stir. Cover with lid and cook over medium heat for approximately 15 minutes until the zucchini is crisp tender (I don't add any water, the zucchini has enough). Stir about every 5 minutes.
  • Remove lid and stir in spaghetti sauce. Cook for another 5 minutes.
  • Great served with cottage cheese or topped with parmesan!

This skillet dish is a great way to get your kids to eat their vegetables. My kids love the zucchini and tomatoes in this dish. I also like that it's a relatively healthy meal, but it doesn't taste like it.

I'm not a big fan of zucchini, but this dish was surprisingly good. The zucchini was tender and flavorful, and the ground beef added a nice savory flavor. I'll definitely be making this again.

I love this recipe because it's so versatile. I can add different vegetables, different types of meat, and different sauces. It always turns out great. I also like that it's a one-pot meal, which makes cleanup a breeze.

This skillet dish is a great way to use up leftover zucchini. I usually have a few zucchinis in my fridge that need to be used up, and this recipe is a perfect way to do it. It's also a great way to get my kids to eat their vegetables.

This is a great recipe for a quick and easy weeknight meal. I used ground turkey instead of beef, and it turned out just as well. The zucchini and tomatoes added a nice freshness to the dish.
