Tangerine Muffins image

This is a very different and delicious muffin, so fresh tasting.

Number Of Ingredients 11

2 c flour
1/2 c sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 (8 oz.) carton vanilla yogurt
1 egg, lightly beaten
1/4 c butter, melted
2 Tbsp milk
1 c diced, peeled tangerine
1 Tbsp grated tangerine peel

Steps:

  • 1. In a bowl, combine the first 5 ingredients.
  • 2. In a small bowl, combine the yogurt, egg, butter, and milk until smooth; stir into dry ingredients just until moistened.
  • 3. Stir in tangerine and peel.
  • 4. Fill greased or paper-lined muffin cups two-thirds full.
  • 5. Bake at 400 degrees for 18-20 minutes.
  • 6. Cool for 5 minutes before removing from pan to wire rack.

I followed the recipe exactly and the muffins turned out terrible. They were dry and crumbly. I'm not sure what went wrong.
