Tea Cakes image

This recipe was given to me by a friend of my sister's. It is very tasty and simple to make. Great with a spot of tea. These are quite good actually.

Number Of Ingredients 7

1 c self rising flour
1/2 c salted butter
1/3 c caster sugar
1/3 c currants,roughly chopped
1 tsp ground nutmeg
1 large egg
splash of milk

Steps:

  • 1. Combine flour and butter until fine crumbs form. Stir in the , currants, sugar and nutmeg. Add egg and knead until mixture comes together as a soft dough- add a "little" splash of milk if it looks to dry and falling apart.
  • 2. Turn dough onto a floured surface, roll to a little over 1/4 of an inch thick and cut out into circles or other pattern.
  • 3. Put a skillet on over medium heat. Add a little butter, reduce heat to medium low. Put 4-5 cakes in the pan at a time. Cook a few minutes on each side. Make sure the pan stays hot enough to fry cakes but not to hot to burn them- just brown so done in the middle. Place in sugar and flip over to coat both sides. Serve with a spot of tea!
