Thai Rice Salad with Peanut Dressing image

This has a wonderful spicy flavor. It's great for potlucks because you can make it ahead of time and it doesn't need reheating.

Overall, this salad was a bit disappointing. I don't think I'll be making it again.

This salad was a bit too expensive to make. I think I'll try a different recipe next time.

The rice was a bit too hard for my liking. I'll cook it for a few minutes less next time.

I found this salad to be a bit bland. I think it could use some more lime juice or fish sauce.

This salad is a bit too spicy for my taste. I'll reduce the amount of chili paste next time.

I added some grilled chicken to this salad for a protein boost. It was a great way to make it a more complete meal.

I'm not a huge fan of cilantro, so I omitted it from the recipe. The salad was still delicious.

I love the crunch of the peanuts in this salad. It adds a nice textural contrast to the soft rice and vegetables.

I'm not usually a fan of rice salads, but this one is a game-changer! The dressing is so creamy and flavorful, and the vegetables are perfectly crisp.

This Thai rice salad was a hit at my last potluck! Everyone loved the combination of sweet, sour, and savory flavors. The peanut dressing really made the dish.
