Yield 6

Number Of Ingredients 14

¼ cup unsweetened flaked coconut
¼ cup slivered almonds
6 ounces plain non-dairy yogurt or Greek yogurt
⅓ cup Silk® Unsweetened Coconutmilk
½ teaspoon garlic powder
1 tablespoon lemon juice
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 pound cooked chicken breast, cubed
1 medium apple, cored and chopped
4 stalks celery, sliced
¾ cup green or red seedless grapes, halved
¼ cup thinly sliced scallions
Salt and pepper, to taste

  • Add remaining ingredients (except toasted coconut and almonds), tossing to combine.
  • Top with toasted coconut and almonds to serve.

I added some chopped pineapple to the salad and it was delicious! I think it would also be good with some chopped mango.

I couldn't find toasted coconut at the store, so I used regular shredded coconut. It still turned out great!

The dressing was a bit too tangy for me. I added a little bit of honey to balance it out.

This salad was a bit too sweet for my taste. I think I'll use less coconut next time.
