Time 15m

Yield 1 serving(s)

Number Of Ingredients 5

2 slices whole wheat bread
2 teaspoons natural peanut butter (I use homemade)
1/2 large tomatoes, sliced
2 -4 leaves spinach or 2 -4 leaves lettuce
salt and pepper

Steps:

  • Wash the spinach leaves, shake off excess water, place in a microwave-proof bowl, and microwave on high for 30 seconds or until just wilted.
  • Alternatively, you can omit this step and just have it raw, or use lettuce leaves.
  • Spread the peanut butter evenly over the bread slices.
  • Place 1-2 wilted spinach leaves (or lettuce) over each slice, and top with tomato slices.
  • Sprinkle with salt and pepper.
  • Toast on a grilling rack in the oven (300C) for 5-7 minutes or until the bottom of the bread is slightly brown.
  • Eat immediately, with fresh fruit for a healthy lunch!

I'm not a big fan of peanut butter, but these sandwiches were surprisingly good! The sweetness of the peanut butter balanced out the acidity of the tomatoes perfectly.

These sandwiches are a great way to use up leftover tomatoes. I also like to add a sprinkle of salt and pepper to the tomatoes before assembling the sandwiches.
