Yield Makes 4 (main course) servings

Number Of Ingredients 12

1 medium onion, chopped
2 garlic cloves, chopped
1 tablespoon olive oil
1/2 pound fresh shiitake mushrooms
1 teaspoon chopped thyme
1 (14 1/2-ounce) can diced fire-roasted tomatoes
1 qt vegetable stock or broth
3/4 cup quick-cooking barley
5 ounces baby spinach (8 cups)
1 tablespoon distilled white vinegar (optional)
4 large eggs (optional)
Garnish: grated Parmigiano-Reggiano

Steps:

  • Cook onion and garlic with 1/2 teaspoon salt in oil in a large heavy saucepan over medium heat, stirring occasionally, until pale golden, about 10 minutes.
  • Meanwhile, discard stems from mushrooms. Halve caps, then thinly slice crosswise. Add mushrooms and thyme to onion and cook, stirring occasionally, until mushrooms are softened, about 5 minutes. Stir in tomatoes with their juice, stock, barley, and 1/2 teaspoon each of salt and pepper and simmer briskly, covered, stirring occasionally, until barley is tender, 10 to 15 minutes. Stir in spinach and cook 1 minute, then season with salt.
  • Meanwhile (if using eggs), bring 2 quarts water to a simmer with vinegar and 1 tablespoon salt in a wide medium saucepan.
  • Break 1 egg into a cup and slide into water. Repeat with remaining eggs, spacing evenly. Poach at a bare simmer until whites are firm and yolks are still runny, 2 to 3 minutes. Transfer to paper towels using a slotted spoon.
  • Serve soup in bowls, topped with eggs.

This was a great soup! It was hearty and filling, and the poached egg added a nice touch of protein. I will definitely be making this again.

The soup was good, but the poached egg was a bit overcooked. I think it would have been better if the egg was cooked for a shorter amount of time.

This soup was a bit too bland for my taste. I think it needed more seasoning. I also found the poached egg to be a bit too runny. Overall, it was an okay soup, but I wouldn't make it again.

This soup is perfect for a cold winter day. It's warm and comforting, and the poached egg adds a touch of richness. I also like to add a dollop of sour cream or yogurt to each bowl.

I've made this soup several times now and it's always a winner. It's so flavorful and comforting, and the poached egg is the perfect finishing touch. I like to add a bit of chopped fresh parsley at the end for some extra color and flavor.

This soup was delicious and easy to make. I used frozen vegetables and it still turned out great. The poached egg added a richness and creaminess that took the soup to the next level. Highly recommend!

Made this soup for dinner tonight and it was a hit! My family loved the hearty broth and the tender vegetables. The poached egg was a nice touch, too. Will definitely be adding this to my regular soup rotation.
