Yellow Squash Casserole image

This is the best squash casserole I have ever tasted.

Number Of Ingredients 8

2 lb yellow squash
1/2 large onion, chopped
1 tube(s) ritz crackers, crushed
1 c sharp cheddar cheese
2 eggs
3/4 c whole milk
1/2 c butter, melted
salt & pepper to taste

Steps:

  • 1. Preheat Oven to 400 degrees F.
  • 2. Lightly steam squash and onion in steamer basket for about 5 minutes. Drain and set aside.
  • 3. In Medium bowl combine cracker crumbs and cheese.
  • 4. In Large bowl, add drained squash and onion. Gently fold in half the cracker/cheese mixture.
  • 5. In a small bowl, whisk together egg and milk, then add to squash mixture. Add half of the melted butter to the squash mixture. Season with salt and pepper.
  • 6. Spread squash mixture in a 9 x 13 baking dish. Top with remaining cracker/cheese mixture. Pour remaining butter over top of casserole.
  • 7. Bake at 400 degrees for 25 minutes, and lightly brown.

This casserole was delicious! I used fresh yellow squash from my garden and it was so flavorful. The casserole was creamy and cheesy, and the crunchy topping added a nice contrast. I will definitely be making this again.
