This recipe yields more than 5 dozen cookies, so it's a great choice to bring to a bake sale or to have on hand for the grandkids!

1 c granulated sugar
1 c firmly packed light brown sugar
1 c shortening
1 c peanut butter
3 large eggs, lightly beaten
1 c all-purpose flour
1 c uncooked quick-cooking oats
2 tsp baking soda
1 tsp baking powder
1 c chopped pecans
1 c flaked coconut
1 c raisins
1 c semi-sweet chocolate chips

Steps:

  • 1. Preheat oven to 350.
  • 2. Combine first 4 ingredients in a large mixing bowl; beat at medium speed with an electric mixer until creamy. Add eggs, beating well.
  • 3. Combine flour and next 3 ingredients; add to peanut butter mixture, and beat well. Stir in pecans and remaining ingredients. Drop dough by level teaspoonfuls onto lightly greased baking sheets.
  • 4. Bake at 350 for 10-12 mins. or until golden. Immediately remove to wire racks to cool.
