APPLE OAT MUFFINS image

Yield 12 muffins

Number Of Ingredients 13

1 1/2 cups oat bran
1/2 cup whole wheat flour
3 tablespoons brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup apple juice
1/4 cup skim milk
3 egg whites
2 tablespoons oil
2 tablespoons honey
1 cup cooked apples, peeled cored and diced
2 tablespoons raisins

Steps:

  • Preheat oven to 400 degrees. Combine oat bran, flour, brown sugar, baking powder, salt and cinnamon and set aside. In a large mixing bowl combine apple juice, skim milk, egg whites, oil and honey. Add flour mixture, apples, and raisins and combine until just moistened. Fill oiled muffin pan. Bake at 400 degrees for about 20 minutes or until golden brown and a cake tester comes out clean.
