APRICOT SALSA image

1 16 oz. can apricot halves
4-5 green onions
1 8 oz. can crushed pineapple
1 red or yellow pepper
1 1/2 tbsp line juice or 2 small limes
1 1/2 tsp dried cilantro
Pepper to taste

Steps:

  • Slice apricots into small chunks (the chucks should be about 1/16th of the half). Chop the green onions and bell peppers so that they are about as big as the apricot chunks. Combine in a medium sized bowl. Sprinkle with the lime and cilantro. Add pepper to taste. Chill for at least an hour before serving.
