Steps:
- Slice apricots into small chunks (the chucks should be about 1/16th of the half). Chop the green onions and bell peppers so that they are about as big as the apricot chunks. Combine in a medium sized bowl. Sprinkle with the lime and cilantro. Add pepper to taste. Chill for at least an hour before serving.
