Avocado with Black Bean Salsa image

Inspired by the fixings at a taco bar, this stuffed avocado delivers an added fiber-protein boost from black beans.

1 avocado, pitted
Coarse salt
2 lime wedges
2 tablespoons salsa
2 tablespoons black beans, drained

Steps:

  • Season avocado halves with salt and squeeze with lime. In a bowl, combine salsa and beans. Divide mixture between avocado halves.

I'm not a huge fan of avocado, but I really enjoyed this salsa. The black beans and corn add a nice balance to the avocado, and the lime juice and cilantro give it a nice zing. I will definitely be making this again.
