BLACK BEAN AND CORN SALAD image

Yield Serves 6, .5 cup each

Number Of Ingredients 9

1 can corn
1 can black beans
1 can diced tomatoes
.5 bunch of cilantro
1 juice of lime
.5 jalopeno pepper
.5 red pepper
.25 red onion
.25 cup red wine vinegar

Steps:

  • Drain and rinse black beans, drain tomatoes and chop to smaller chunks, drain corn, chop the jalopeno, red pepper and red onion and add all ingredients to a medium bowl and mix.
