Tips:

  • Choose the right potatoes: Use firm, sweet potatoes that are about the same size so they cook evenly. Avoid potatoes that are bruised or have blemishes.
  • Prick the potatoes: Before baking, prick the potatoes all over with a fork. This will help them cook more evenly and prevent them from bursting.
  • Bake until tender: Bake the potatoes at 400°F for about 1 hour, or until they are tender when pierced with a fork.
  • Let the potatoes cool: Let the potatoes cool slightly before handling them. This will make them easier to peel and mash.
  • Mash the potatoes: Use a potato masher or ricer to mash the potatoes until they are smooth. You can also use an electric mixer on low speed.
  • Season the potatoes: Add salt, pepper, and other seasonings to taste. You can also add a little butter or milk for a richer flavor.
  • Transfer the potatoes to a baking dish: Spread the mashed potatoes in a greased 9x13 inch baking dish.
  • Top with the pecan topping: In a small bowl, combine the pecans, maple syrup, and brown sugar. Sprinkle the pecan topping over the mashed potatoes.
  • Bake the casserole: Bake the casserole at 350°F for about 20 minutes, or until the pecan topping is golden brown and bubbly.
  • Let the casserole cool: Let the casserole cool for a few minutes before serving.

Conclusion:

This 3-ingredient Sweet Potato Casserole with Maple Pecans is an easy and delicious side dish that is perfect for any occasion. The sweet potatoes are creamy and flavorful, the pecan topping is crunchy and sweet, and the maple syrup adds a touch of sweetness and richness.
