GRANDMA'S DATE-NUT BREAD
This is the recipe for date-nut bread that my grandmother always made around Christmas time. Definitely a family favorite! For best results don't use a glass pan.

Steps:
- Put raisins in a bowl. Pour boiling water over raisins; soak until raisins have flavored the water, about 20 minutes. Drain raisins, reserving the water. Discard raisins.
- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.
- Bring reserved water to a boil in a small saucepan. Measure 3/4 cup boiling water into a bowl. Stir baking soda into water.
- Put dates and prunes in a large bowl. Pour baking soda-water over dates and prunes; add unsalted butter and stir until melted. Stir sugar and vanilla extract into the fruit mixture; let cool to room temperature.
- Stir egg into the fruit mixture to evenly coat. Mix flour and salt together in a small bowl; add to fruit mixture and stir. Fold walnuts into the mixture and pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 65 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

- Preheat oven to 350 degrees.
- Prepare a loaf pan by spraying with cooking spray.
- Combine dates, nuts and raisins; sprinkle with baking soda.
- Pour 1 cup of boiling water over all of this.
- Cover the bowl and set aside while mixing remaining ingredients.
- In another bowl, with a pastry blender, mix the flours, sugar, Splenda, baking powder, egg and egg white.

- Heat milk in microwave for 2 minutes.
- Add butter to milk and stir until melted.
- Add egg to milk and stir until mixed.
- Put flour, brown sugar, salt, nutmeg, cinnamon, ginger, vanilla and egg in bread pan. Add milk mixture and yeast to bread pan per manufacturer's directions.
- Start bread machine on dough cycle.
- Remove dough and roll out into a 6x24-inch sheet.
- Spread raisins, dates and nuts onto dough leaving about an inch on the edges.
- Add more if needed.
- Peel long edge up and roll up dough, making long roll.
- Pinch edges to seal.
- Lay with edge down into a circle.
- Let rise covered with cloth in a slightly warmed oven for 30 minutes.
- Optional: I use an egg wash to give the bread a more golden shiny look.
- Also I might put slight cuts in the dough to give it texture.
- Bake in 350°F oven for 22 minutes.

While living in Germany, I loved nibbling on Weihnachtsstollen purchased from the Christkindlmarkt around Christmastime. Spiced with cardamom, nutmeg, and the zests of fresh lemon and orange. Dried fruits such as raisins and Medjool dates sweeten the loaf instead of candied fruits.

- Preheat oven to 350F degrees.
- Sift together all-purpose flour, baking powder, brown sugar, cardamom, nutmeg, and salt. Cut in butter with pastry blender until coarse crumbs form.
- In a separate bowl, mash cottage cheese, egg, lemon zest, orange zest, and vanilla together until cottage cheese curds are smooth (I do this with a potato masher). Add raisins, dates, and almonds and stir until combined. Add flour mixture and stir with hand just until dough is formed. Place dough on lightly floured surface. Knead lightly 10 times.
- Form into an 8 by 10 inch oval. Pat dough to an even thickness for even baking. Place stollen on a greased parchment paper-lined baking sheet.
- Bake at 350F degrees for 45 minutes to 1 hr 15 minutes or until inserted toothpick comes out clean. Cover with aluminum foil after 45 minutes of baking to prevent burning. Note: Stollen burns easily.
- Remove stollen from the oven but leave it on the baking sheet. Brush hot stollen with 2 tablespoons of melted butter. Immediately, dust the stollen thoroughly with confectioner's sugar. Place baking sheet with stollen on wire rack to cool. When cool, discard parchment paper. Wrap stollen in plastic wrap and aluminum foil and allow to set for 2 days at room temperature to combine flavors before cutting or consuming. (Setting for 2 days makes the loaf moister and tastier). Keeps for 1 week at room temperature or longer if refrigerated. Freezes well.

- In a saucepan, heat together first 6 ingredients and allow mixture to simmer for a minute or 2, or until nicely blended and raisins are plumped.
- Allow to COOL for 30 minutes.
- Mix together and stir in the next 8 ingredients until dry ingredients are just moistened.
- Do not overmix.
- Stir in the apricot jam.
- Scrape batter into a greased 10-inch springform pan and bake in a 325°F.
