2 tablespoons apple cider
2 tablespoons orange juice
2 tablespoons fresh lime juice
2 tablespoons olive oil
1 teaspoon sugar
Kosher salt and freshly ground black pepper
12 ounces radishes, trimmed and each cut into wedges
1/4 cup fresh cilantro leaves
1/4 cup finely chopped red onion

Steps:

  • In a large bowl whisk together the cider, orange juice, lime juice, olive oil, and sugar until the sugar dissolves. Taste and season with a pinch of salt and pepper. Add the radish wedges, cilantro, and red onion. Toss gently and refrigerate for at least an hour making sure to toss the salad midway through its ride in the refrigerator. Serve cold or at room temperature.

Kosher salt
1 pound carrots
1 tablespoon grated peeled ginger
3 tablespoons unseasoned rice vinegar
2 teaspoons fresh lime juice
1/4 cup vegetable oil

1 3/4 teaspoons black sesame seeds

Steps:

  • Shave the daikon into ribbons with a vegetable peeler. Toss with 1/4 teaspoon salt in a colander; let drain in the sink, tossing occasionally, about 15 minutes. Meanwhile, shave the carrots into ribbons with the peeler.
  • Make the dressing: Whisk the ginger, vinegar, lime juice and 1/2 teaspoon salt in a large bowl. Slowly whisk in the vegetable oil and sesame oil until blended.

3 large eggs
2 teaspoons Dijon mustard

1/2 pound lump crabmeat (1 cup)
1/2 cucumber, peeled and seeded, cut into 1/4-inch dice
2 tablespoons mayonnaise
1 tablespoon freshly squeezed lemon juice
1 teaspoon mustard
1 teaspoon coarse salt
1 teaspoon chervil leaves, plus more for garnish

Steps:

  • Cut the daikon radishes into 1 1/4-inch cubes (make sure the bottom is cut evenly so the cube will sit flat). Use a 1-inch melon baller to scoop out a bowl in the center of each cube.
  • Bring a pot of water to a boil, and blanch the daikon boxes for 3 minutes. Drain, and set aside.
