Steps:

  • In a saucepan, bring 2 cups of water to a gentle boil.
  • Add the tea bags; cover and remove pan from the heat source.
  • Steep for 10 minutes.
  • Take out tea bags and don't squeeze them.
  • Pour the tea into a 2-quart pitcher.
  • Add in the sugar; stir until dissolved.
  • Add in the vanilla, almond extract, and lemon juice; stir to mix.
  • Add the remaining 6 cups of water and stir.
  • Let tea cool to room temperature, then chill in the refrigerator.

  • In a saucepan, brew tea bags in hot water for 15 minutes. While waiting for tea to brew, squeeze the lemon slices as you put them into a large pitcher. Pour in sugar.

  • In a large bowl, cream butter and sugars until light and fluffy, about 5 minutes. Add eggs and extract; mix well. Add flour and baking powder (dough will be soft). Chill. , For filling, in a small bowl, stir egg white, sugar, almonds and lemon juice. Remove a portion of the dough at a time from the refrigerator. 1 1/4 sticks (10 tablespoons) unsalted butter, plus more for muffin tin
1 cup all-purpose flour, plus more for tin
1 1/4 cups finely ground unblanched almonds
1 cup sugar
1 teaspoon coarse salt
5 large egg whites
4 teaspoons kirsch (cherry brandy)
30 sweet (Bing) cherries

Steps:

  • Preheat oven to 400 degrees. Brush 30 cups of 2 mini-muffin tins with butter, and dust lightly with flour.
  • Melt butter in a medium skillet over medium-high heat. When it begins to sputter, reduce heat to medium. Cook, swirling skillet occasionally, until butter has lightly browned. Skim foam from top, and remove skillet from heat.
  • Whisk together flour, ground almonds, sugar, and salt in a bowl. Add egg whites, and whisk until smooth. Stir in kirsch. Pour in butter, leaving any dark-brown sediment in skillet, and whisk to combine. Let stand for 20 minutes.
  • Ladle 1 tablespoon batter into each buttered muffin cup, filling about halfway. Push a cherry into each, keeping stem end up. With a small spoon, smooth batter over cherries to cover. Bake until a toothpick comes out clean and cakes are golden brown, 12 to 15 minutes. Let cool 10 minutes. Run a knife around edges to loosen, and unmold. Cakes can be stored in airtight containers at room temperature overnight.

2 ounces blanched almonds, ground fine
3 tablespoons cake flour
1 egg white plus 3 egg whites
1 tablespoon heavy cream
Granulated sugar for dusting

Steps:

  • Preheat oven to 375 degrees F.
  • Grease mini muffin tins and set aside.
  • Sift 2 ounce of the sugar, ground almonds and cake flour in a bowl. Add 1 egg white to form a paste. In another bowl whip the 3 egg whites until soft peaks form. Gradually add the remaining sugar. Continue to whip until the meringue is strong but not dry. Fold the meringue into the almond paste mixture and add the heavy cream at the end. Mix well.
  • Fill the prepared muffin tins half full. Bake promptly in the pre-heated oven until golden, approximately 8 to 12 minutes, depending on the size of the molds. Cool the tea cakes about 5 minutes before unmolding them on a wire rack. Dust with confection sugar before serving. Store the cakes in an airtight container.

  • Preheat oven to 350 degrees. Lightly butter and flour an 3-by-8-inch metal loaf pan. Steps:

  • Note: the key to making this cake batter smooth is incorporating the almond paste completely before the eggs are added; the success of the glaze-a pretty crystallized look and a proper set-requires 2 things, the glaze must be made just before it is brushed on the cake, and the cake must be warm from the oven so the sugar and juices can penetrate it properly and form crystals.
  • Position a rack in the lower third of the oven; preheat oven to 350°.

1 can(s) lemonade (not frozen, i use minute maid lite)
1/2 c sugar
1 1/2-2 tsp almond extract
4 c water
sprig(s) mint, fresh

Steps:

  • 1. Bring 4 cups water to a boil. Add teabags and boil for 5-10 minutes. Remove from heat and let steep for at least 15 minutes.
  • 2. Combine tea, lemonade, sugar, and almond extract in a 2-quart pitcher. Stir until sugar is dissolved. (If you prefer your tea a little sweeter, increase sugar to 3/4 cup)

  • 2. Combine the butter and 1 cup sugar; blend well. Beat in eggs, one at a time. Add almond extract.
  • 3. Sift together dry ingredients; add to egg mixture alternately with milk. Blend just enough to mix. Fold in lemon peel and nuts.
  • 4. Turn into greased loaf pans (aluminum or glass). Bake in slow oven 325'F. for 30-35 minutes or until toothpick inserted in the middle comes out clean. (If it isn't done in 35 minutes, just add 2 minutes at a time. My loaves today took 37 minutes total.)
  • 5. Mix 6 Tbsp. of lemon juice and 1/2 -3/4 cup confectioners sugar. Immediately spoon over hot loaf in pan. Cool 10 minutes, then remove from pan. Cool on rack. Do not cut until completely cooled. Makes 2 loaves

1 1/4 cups flour
1/2 cup almond meal
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
5 teaspoons matcha green tea powder
1/2 cup canola oil
1 cup almond milk (you could use soy, rice, or coconut)
4 teaspoons vanilla extract
2 teaspoons almond extract
1 tablespoon apple cider vinegar
1/2 cup refined coconut oil
2 teaspoons vanilla extract
2 teaspoons almond extract
4 cups powdered sugar
1/4 cup water
sliced almonds (to garnish)

Steps:

  • Cakes:.
  • Preheat oven to 350 degrees. Line and grease a 12-cup cupcake pan, you may need another pan for additional batter.
  • Whisk together flour, almond flour, baking powder, baking soda, salt, green tea powder, and sugar in large bowl.
  • Combine oil, milk, vanilla, almond extract, and vinegar in a separate bowl.
  • Add the wet mixture to dry and mix using a whisk. Don't mix until completely smooth. Lumps are good.
  • Fill the cups 3/4 full and bake for about 15 minutes until edges just barely begin to brown. Cool.
  • Frosting:.
  • Using a mixer, beat the coconut oil, vanilla, and almond extracts until combined.
  • Add the powdered sugar one cup at a time. The mixture will be crumbly.
  • Add water little by little until you reach the desired frosting consistency. YOU MAY NOT NEED TO USE ALL THE WATER.
  • Frost the cakes and decorate. For large cupcakes I made an almond flower and for the small ones I used two slices oriented vertically to like almost like two leaves.
  • Try not to eat all at once!

1 teaspoon fennel seeds
1 1/2 teaspoons loose black tea leaves or 2 teabags
6 to 8 , shelled, raw almonds, , coarsely broken

Steps:

  • 1. Put the water and fennel seeds in a medium saucepan and bring to a boil over high heat. Then, add the milk and bring to a boil again.2. Reduce the heat to low, add the tea leaves, and continue to boil, about 30 seconds. Remove from the heat, cover the pan, and let the tea steep about 2 minutes.3. Divide the almonds into 2 teacups.
