1/2 cup sugar
1/4 teaspoon salt
2 large egg whites (lightly beaten)

1/8 teaspoon extra-strong bitter almond oil

  • Gradually add almond extract, bitter almond oil, and beaten egg whites to the almond paste mixture.
  • Using a small scoop, form cookies and place on prepared baking sheet.
  • Sprinkle cookies lightly with confectioners' sugar and sliced almonds.

Tortes
4 ounces semisweet chocolate, chopped
3/4 cup sliced almonds, toasted
12 1 1/2-inch-diameter amaretti cookies (Italian macaroons), about 2.6 ounces total
1/4 teaspoon cinnamon
Pinch of salt
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup sugar
3 large eggs
Topping
3/4 cup chilled whipping cream
1 1/2 teaspoons powdered sugar
1/2 teaspoon almond extract
2 amaretti cookies, crumbled

Yield Makes 6 servings

Number Of Ingredients 7

3 large eggs, separated
5 tablespoons sugar, divided
1/2 pound mascarpone (about 1 cup) at room temperature
Pinch of salt
1/2 cup chilled heavy cream
1 cup brewed espresso or very strong brewed coffee, cooled to room temperature
5 ounces amaretti (crisp Italian macaroons; 30 to 40, depending on size)

Steps:

  • Beat together yolks and 2 tablespoons sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. Beat in mascarpone until just combined.
  • Beat whites with salt in another large bowl with cleaned beaters until they just hold soft peaks. Add remaining 3 tablespoons sugar, a little at a time, beating, then continue to beat until whites just hold stiff peaks.
  • Beat cream in another bowl with cleaned beaters until it just holds stiff peaks. Gently but thoroughly fold cream into mascarpone mixture, then fold mixture into whites.
  • Pour espresso into a shallow bowl. Dip half of amaretti (15 to 20) in espresso for about 20 seconds, turning to coat both sides and letting excess drip off. Arrange in 1 layer in an 8-inch square baking dish. Spread half of mascarpone mixture evenly over amaretti. Make another layer in same manner with remaining amaretti (dipped in espresso) and mascarpone mixture. Chill at least 6 hours.

Tips:

  • Use almond flour: Almond flour is the key ingredient in amaretti macaroons, and it gives them their characteristic flavor and texture. Be sure to use finely ground almond flour for the best results.
  • Beat the egg whites until stiff peaks form: This will help to incorporate air into the macaroons, making them light and fluffy.
  • Add the sugar gradually: Adding the sugar all at once can cause the egg whites to deflate. Be sure to add it gradually, beating constantly, until the meringue is glossy and stiff.
  • Fold in the almond flour and other ingredients gently: Overmixing can cause the macaroons to become tough. Be sure to fold in the ingredients gently, until just combined.
  • Let the macaroons rest before baking: This will help them to develop their signature cracks.
  • Bake the macaroons at a low temperature: This will help to prevent them from browning too much.
  • Store the macaroons in an airtight container: This will help to keep them fresh and flavorful.

Conclusion:

Amaretti macaroons are a delicious and classic Italian cookie. They are perfect for any occasion, and they are sure to be a hit with your friends and family. With a few simple tips, you can make perfect amaretti macaroons at home. So what are you waiting for? Give this recipe a try today!
