8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

  • Preheat an oven to 350 degrees F (175 degrees C). Spread the slivered almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, 5 to 10 minutes. 2 lbs spinach
1 lb bacon, diced
1/2 cup salad oil
2 large garlic cloves, crushed
1/2 cup red wine vinegar
1/2 cup lemon juice
4 teaspoons Worcestershire sauce
1 teaspoon dry mustard
1/4 cup Amaretto
salt and pepper
1/4 lb mushroom, sliced
1 small red onion, sliced

Steps:

  • Wash spinach.
  • Remove large stems and tear into bite-size pieces.
  • Store in plastic bags lined with paper towels in refrigerator until ready to use.
  • Place bacon in a large skillet.
  • Cook over moderate heat, stirring occasionally, until bacon is crisp and all fat is rendered.
  • Remove bacon, reserve 1/8 cup bacon fat, discard the rest.
  • Return bacon fat to skillet and add oil, garlic, vinegar, lemon juice, Worcestershire sauce, mustard, amaretto, salt and pepper.
  • Simmer until blended.

1 tablespoon canola oil
1 onion, minced
3/4 pound chopped uncooked bacon
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon dark brown sugar
1/2 teaspoon coarsely ground black pepper, plus more for seasoning
1 tablespoon salt, plus more for seasoning
1 pound fresh baby spinach, washed, spun dry and chilled
1 avocado, halved, pitted and flesh diced
1/2 lemon, juiced

Steps:

  • In a small saucepan, add the eggs and a few pinches of salt. Cover the eggs with cold water and bring to a boil over medium heat. Remove the pan from the heat and cover with a lid for 10 minutes. Remove from water and cool in a bowl of iced water. Peel and set aside.
  • In a large saute pan over medium heat, add the oil. Add the onions and bacon and saute until the bacon is crisp. Stir in the vinegar, mustard, sugar, black pepper and salt and cook for 1 minute. Set aside and keep warm.

8 slices bacon
3 hard-boiled eggs
1 cup fresh bean sprout

1/4 cup grated onion

Steps:

  • Clean and prepare spinach. (You can also use fresh bagged spinach) Place in large bowl.
