2 cups light brown sugar, packed
3/4 cup butter, softened
2 large eggs
1/2 teaspoon salt
2 cups flour
2 cups quick-cooking oatmeal, not instant
1 teaspoon ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
3 tablespoons boiling water
1 egg white
1 tablespoon vanilla
2 tablespoons milk
2 cups powdered sugar
1/4 cup vegetable shortening

Steps:

  • For oatmeal cookie mixture -- cream butter, sugar and eggs.
  • Sift together flour, salt and baking powder and add to creamed mixture.
  • Add cinnamon and oatmeal.
  • Mix well. Add soda to hot water and add to batter -- mix well.
  • Drop by tblspoon onto greased cookie sheet;
  • bake 19-15 min in 325* oven.
  • For filling, combine egg white, vanilla, milk and 1 cup of powdered sugar.
  • Cream well.beat in mixing bowl about 10 minutes.Add rest of ingredients and beat an additional 2-3 minutes.
  • Put filling between 2 cookies.
  • Wrap each whoopie pie cookie in plastic wrap.

I got this recipe from a friend who sold baked goods at the South Bend Farmer's Market many years ago (1960's). Since this tastes almost like pecan pie (which I love!) and I am now allergic to nuts I have used this recipe almost yearly, especially for the holidays. Its well worth trying!

1/4 c butter
1 c brown sugar, firmly packed
2 large eggs, beaten
1 pinch salt
1 tsp vanilla extract
3/4 c milk
3/4 c light corn syrup
1/2 c unsweetened coconut
3/4 c quick oats, not cooked, use dry
1 unbaked pie crust, 9 inches

Steps:

  • 1. Preheat oven to 350 degrees. Melt butter. Mix with sugar in a medium mixing bowl. Add beaten eggs, salt, and vanilla. Add remaining ingredients (except pie shell) in order listed. Mix well. Pour into unbaked pie shell and bake at 350 degrees for about 50 minutes.
  • 2. NOTE: You can protect the edges of the pie shell from becoming too dark by covering them with foil around the pie. There are also edge protectors sold in most stores that carry pie plates.

1 c dark molasses
3/4 c milk
1 Tbsp butter, melted
1 c sugar
1 1/2 c quick cooking oats
1/2 c chopped walnuts
2 tsp vanilla extract
1/4 tsp salt
1 (9") pie crust shell, unbaked

Steps:

  • 1. Preheat oven to 350 degrees F. In a large bowl, combine all ingredients except pie crust; mix well then pour into pie crust. Bake 40 to 45 minutes, or untl center is set. Let cool 30 minutes. Serve pie warm, or refrigerate and serve when ready.
