Number Of Ingredients 13

2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon sugar
1 tablespoon instant yeast
1 cup warm water
1 tablespoon olive oil
2-3 tablespoons olive oil
1 teaspoon Italian seasoning (oregano, basil, parsley)
1/4 teaspoon garlic powder
dash salt
1/2 cup tomato pizza sauce
1 cup shredded mozzarella cheese
1/4 cup fresh grated parmesan cheese

Steps:

  • Combine the first 4 dry ingredients in a large bowl. I prefer to use the Kitchen Aid mixer.
  • Combine water and oil, then add to the dry ingredients. I use my KitchenAid mixer to mix then use the dough hook to knead for about 5 minutes. You can mix by hand then knead on a lightly floured surface until the dough is smooth and elastic.
  • Grease a bowl with olive oil and put ball of dough in it. Toss it around to coat. Cover the bowl with plastic wrap and let rise 20 minutes. I use the same mixer bowl so I don't dirty another dish. In a rush, I sometimes skip this rise. The dough will still be good, just not as thick or pliable.
  • Grease a 12" or 16" pizza pan and spread dough out with your hands on the pan. Don't use a rolling pin. Let rise for 15 more minutes.
  • Top pizza with olive oil, Italian spices, garlic powder, salt. Then add your favorite pizza sauce, mozzarella cheese, toppings and parmesan cheese.
  • Bake at 450 degrees for 11-15 minutes.

ANDREA’S PIZZA

Yield 6 to 8 people

Number Of Ingredients 15

For the dough:
2 ounces dry yeast
8 cups all-purpose flour
½ cup plus 2 tablespoons olive oil
1 teaspoon salt
1 cup whole milk
For the sauce:
¼ cup olive oil
10 anchovies, preserved in salt, filleted and rinsed
two 1-pound cans Italian peeled tomatoes
salt
4 tablespoons black Kalamata olives, pitted
2 red onions, thinly sliced
1 head garlic, cloves separated, skin on
1 teaspoon minced fresh oregano

Steps:

  • Mix the dough. Proof the yeast in ½ cup water. Pile the flour in a mound. Make a well in the center and pour in ½ cup plus 2 tablespoons water, the milk, olive oil, yeast, and salt. Slowly and gently fold the flour to mix in the wet ingredients. The dough should be soft and stick to your hands. If it is too dry, add a little water. Do not overwork the dough. Spread the dough in a jellyroll pan, cover with a dish towel, and set it aside to rise until it doubles, about 1 hour. Make the sauce while you are waiting for the dough to rise. In a sauté pan, cook the onions in the olive oil until golden. Add the anchovies, tomatoes, and salt to taste and cook for 20 to 25 minutes over medium heat. When the sauce has thickened, remove it from the heat and allow it to cool. Preheat the oven to 300F. Spread the sauce evenly over the dough, dot with garlic cloves at 1-to-2 inch intervals, and sprinkle with oregano and olives. Bake for 45 minutes or until the crust is cooked through.

Tips

  • Use high-quality ingredients: The better the ingredients, the better the pizza will be. This means using fresh, flavorful tomatoes, high-quality cheese, and a good quality olive oil.
  • Make your own dough: Homemade pizza dough is always better than store-bought dough. It's easy to make and only takes a few minutes.
  • Don't overcrowd the pizza: When topping your pizza, don't go overboard. Too many toppings will make the pizza soggy and difficult to cook.
  • Cook the pizza at a high temperature: The best way to get a crispy crust is to cook the pizza at a high temperature. This will help to create a nice, even crust.
  • Let the pizza rest before slicing: After the pizza is cooked, let it rest for a few minutes before slicing. This will help to prevent the toppings from falling off.

Conclusion

Making great pizza at home is all about using the right ingredients and techniques. By following these tips, you can make delicious pizza that your family and friends will love. So next time you're craving pizza, don't order takeout. Instead, fire up your oven and make your own!
