1 teaspoon unsalted butter
1 ⅛ cups chopped dark chocolate
1 cup unsalted butter
1 tablespoon instant coffee
5 large eggs, separated
⅓ cup brown sugar
1 pinch salt
5 tablespoons warm water
2 tablespoons cocoa powder
1 ⅛ cups chopped dark chocolate
⅞ cup light cream
5 ounces mascarpone cheese
1 tablespoon white sugar
1 pinch salt
1 cup chopped white chocolate
2 teaspoons gelatin powder
3 tablespoons water

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a springform pan with butter.
  • Place dark chocolate and butter in top of a double boiler over simmering water. 3 eggs
1 cup sugar
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 cup milk
4 egg yolks
1/2 cup sugar
1 lb mascarpone cheese
1/4 cup sambuca or 1/4 cup other anisette
1/2 cup sugar
1/2 cup water
2 tablespoons sambuca or 2 tablespoons other anisette
2 tablespoons semisweet chocolate, grated

Steps:

  • MAKE THE CAKE: Preheat oven to 350*F.
  • Line a 13x9" baking pan with parchment paper; set aside.
  • Whip the eggs and sugar together until light and fluffy using an electric mixer on medium-high speed.
  • With the mixer running, drizzle in the vegetable oil, then the vanilla.
  • Sift the flour and baking powder together; add to the egg mixture alternately with the milk, mixing after each addition, just until combined.

9 tablespoons sugar, divided
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract

1 (9 ounce) box chocolate wafers
1 tablespoon instant espresso powder
nonstick cooking spray, for pan
chocolate, for garnish
plain espresso beans, for garnish
