APPLE CINNAMON BUNDT CAKE

Apple Cinnamon Bundt Cake image

This recipe is from Every Day Foods. I saw it on TV, and it looked so easy, I had to make it. It's moist and full of tender and chunky apple slices, and has a rich cinnamon spice flavor. I served it still warm with a scoop of vanilla ice cream. Wow! Be sure to serve within the first day or two, as the apples will break down.

Time 1h30m

Yield 12 serving(s)

Number Of Ingredients 11

2 1/2 cups flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup unsalted butter, melted
1 1/2 cups packed brown sugar (it calls for light brown, but I used dark brown, and I really liked that)
4 large eggs
6 medium apples (keep from turning brown with a little lemon juice squeezed on the slices) or 4 large apples, peeled, cored and sliced 1/4 inch (keep from turning brown with a little lemon juice squeezed on the slices)
1 cup confectioners' sugar
2 -3 tablespoons water (I used apple juice, yum!)

Steps:

  • Preheat oven to 350, and prepare the 12 cup bundt pan (grease and flour if you don't have a non-stick).
  • In a medium bowl, whisk the flour, cinnamon, baking powder, salt, and baking soda together.
  • In a large bowl, melt the butter in the microwave, and add brown sugar and eggs, whisking until smooth.
  • Gradually whisk in dry ingredients just until combined- don't overmix.
  • Fold in the apples (it will look sort of like peanut butter coated apple slices, but don't worry- the batter bakes up around the apple slices) and spoon batter into the bundt pan, smoothing the top.
  • Bake until a tester inserted into the center of the cake comes out clean (about an hour).
  • Cool in the pan for about 15 minutes, and invert onto a rack placed over wax paper to cool completely.
  • Make the glaze by whisking the water (or apple juice) together with the confectioners' sugar adding just enough liquid to make the glaze thick but pourable.
  • Drizzle glaze over completely cooled cake, and let it firm up before serving.

Categories     Fall     Dessert     Bake     Cake     Apple     Walnut     Rosh Hashanah/Yom Kippur     Butterscotch/Caramel     Dairy Free     Cinnamon

Yield 12-14 servings

Number Of Ingredients 14

150 grams or 1/2 cup plus 1 1/2 tablespoons (140 ml) eggs (about 3 large eggs)
100 grams or 1 cup walnut halves
300 grams or 2 1/2 cups (lightly spooned into the cup and leveled off) bleached all-purpose flour
5.5 grams or 1 teaspoon baking soda
6 grams or 1 teaspoon fine sea salt
4.4 grams or 2 teaspoons ground cinnamon
4 large tart apples (657 grams or 1 1/2 pounds) / 525 grams or 4 cups diced
269 grams or 1 1/4 cups (296 ml) canola or safflower oil
200 grams or 1 cup granulated sugar
163 grams or 3/4 cup light brown sugar
2 teaspoons (10 ml) pure vanilla extract
Caramel Sauce and Glaze (optional)
Baking Equipment
The pan must be a minimum 12 cup capacity, such as a Nordic Ware Anniversary Bundt Pan with 10 to 15 cup capacity, or a 12 cup Bundt pan, coated with baking spray with flour; or a 16 cup two-piece angel food pan, bottom lined with parchment, then coated with baking spray with flour

Steps:

  • Preheat the oven:
  • Twenty minutes or longer before toasting the walnuts, set an oven rack in the lower third of the oven. Set the oven at 350ºF/175ºC.
  • Mise en place:
  • Thirty minutes to 1 hour ahead, set the eggs on the counter at room temperature (65º to 75ºF/19º to 24ºC).
  • TOAST AND CHOP THE WALNUTS: Spread the walnuts evenly on a cookie sheet and bake for 5 minutes. Turn the walnuts onto a clean dish town and roll and rub them around to loosen the skins. Discard any loose skins and let the nuts cool completely. Chop medium coarse.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Peel, core, and cut the apples into 1/8 to 1/4 inch dice.
  • Make the batter:
  • Into the bowl of a stand mixer, weigh or measure the eggs. Add the oil, granulated and brown sugars, and the vanilla. Attach the flat beater and beat on medium speed for 1 minute, until blended.
  • Add the flour mixture and beat on low speed for 20 seconds, just until incorporated. Scrape down the sides of the bowl.
  • Detach the bowl from the stand and with a large spoon stir in the apples and walnuts. Spoon the batter into the prepared pan.
  • Bake the cake:
  • Bake for 50 to 60 minutes, or until a wire cake tester inserted near the center comes out clean and the cake springs back when pressed lightly in the center.
  • Cool the cake:
  • Let the cake cool in the pan on a wire rack for 30 minutes. If using a straight sided pan, run a metal spatula between the sides of the pan and the cake. Invert the cake onto a wire rack that has been lightly coated with nonstick cooking spray and cool completely for about 1 1/2 hours.
  • Drizzle Caramel Sauce and Glaze over the cake after unmolding.

Caramel sauce:
1 cup sugar
Pinch of cream of tartar
1/4 cup fresh apple cider
1/4 cup heavy cream
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
Cake:
Nonstick vegetable oil spray
1 1/4 cups (2 1/2 sticks) unsalted butter
1 vanilla bean, split lengthwise
2 1/3 cups all-purpose flour
1 1/4 cups slivered almonds
2 teaspoons baking powder
2 teaspoons kosher salt
1 1/2 teaspoons freshly grated nutmeg
1 1/2 teaspoons ground cinnamon
1 teaspoon ground allspice
3/4 teaspoon ground ginger
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cloves
1 cup (packed) dark brown sugar
1 cup sugar
3/4 cup powdered sugar plus more
1 teaspoon finely grated lemon zest
3 large eggs
5 large egg yolks
1 cup whole milk
Special Equipment
A 10"-diameter nonstick Bundt pan

Steps:

  • For caramel sauce:
  • Combine sugar, cream of tartar, and 1/4 cup water in a medium saucepan over medium heat, stirring until sugar dissolves. Cook, without stirring and occasionally swirling pan for even cooking, until mixture turns a dark amber color. Remove from heat; slowly add apple cider, cream, vinegar, vanilla, and salt (mixture will bubble vigorously), whisking to combine. Return pan to medium heat and bring to a vigorous boil. Reduce heat to a simmer and cook, stirring to dissolve any caramel bits, for 1 minute. Remove from heat and let cool. Set aside. DO AHEAD: Caramel sauce can be made 1 week ahead. Cover and chill. Rewarm slightly before using.
  • For cake:
  • Arrange a rack in middle of oven and preheat to 350°F. Generously coat Bundt pan with nonstick spray. Place butter in a medium saucepan over medium heat. Scrape in seeds from vanilla bean; add bean. Cook, stirring often, until butter foams, then browns (do not burn), about 5 minutes. Carefully remove vanilla bean; pour brown butter into a medium bowl and chill until slightly firm, about 45 minutes.
  • Pulse flour and almonds in a food processor until almonds are finely ground. Transfer to a large bowl. Whisk in baking powder and next 7 ingredients; set aside.
  • Using an electric mixer on medium speed, beat brown butter, brown sugar, sugar, and 3/4 cup powdered sugar in a large bowl, frequently scraping down sides and bottom of bowl and beaters, until light and fluffy, about 5 minutes. Mix in lemon zest. Add eggs and yolks one at a time, beating to blend between additions; beat mixture until fluffy, about 3 minutes.
  • Reduce speed to low. Add half of dry ingredients; mix until almost blended. Add milk and mix until almost blended. Add remaining dry ingredients; mix until batter is blended and smooth. Scrape into prepared pan. Tap pan gently on counter to even out.
  • Bake until a tester inserted near the center of cake comes out clean and cake is dark golden brown and has begun pulling from sides of pan, 65-70 minutes.
  • Transfer pan to a wire rack. Let cake cool in pan for 25 minutes. Invert cake onto rack and let cool completely, about 1 hour. DO AHEAD: Cake can be made 2 days ahead. Store airtight at room temperature.
  • Dust cake lightly with powdered sugar. Drizzle caramel sauce over cake, allowing it to drip down sides and into grooves and crevices. Serve remaining sauce alongside.

FOR THE CREAM CHEESE FILLING:
8 oz cream cheese
1 egg
1/4 c butter, softened
1/2 c granulated sugar
2 Tbsp all-purpose flour
1 tsp vanilla
FOR THE CAKE:
1 c chopped pecans
1 1/2 lb apples, peeled and chopped (I used galas)
3 c all-purpose flour
1 c granulated sugar
1 c packed brown sugar
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1 tsp salt
1 tsp baking soda
3 eggs, beaten
3/4 c canola oil
3/4 c unsweetened applesauce
1 tsp vanilla
FOR THE PRALINE FROSTING:
1/2 c packed brown sugar
1/4 c butter
3 Tbsp milk
1 c confectioners' sugar
1 tsp vanilla
additional pecans for garnish

Steps:

  • 1. Pre-heat the oven to 350 degrees. Grease and flour a 14-cup bundt pan.
  • 2. Start by toasting your pecans in the oven for 8 - 10 minutes or until fragrant. Be sure to toss half way through cooking time. Set aside when they are done.
  • 3. Prepare filling: Beat butter, cream cheese, and sugar until light and fluffy. Stir in egg, vanilla, and flour and mix until smooth. Set aside.
  • 4. Prepare cake: In the bowl of an electric mixer, fitted with the paddle attachment, beat sugars, canola oil, and applesauce. Add in the eggs, one by one. Stir in vanilla.
  • 5. In a separate bowl, combine flour, spices, salt and baking soda.
  • 6. Working in batches, add this to your wet mixture.
  • 7. Remove bowl from mixer and fold in pecans and apples.
  • 8. Baking: Place 2/3 of the batter into the bundt pan. Spoon in the cream cheese mixture and, using a paring knife, swirl around to incorporate evenly. Be sure to leave about an inch border, so that the cream cheese does not leak out while baking.
  • 9. Place the remaining 1/3 of the batter on top.
  • 10. Bake for 60 - 75 minutes until a toothpick comes out clean.
  • 11. Cool completely on a wire rack.
  • 12. Frosting the cake: Bring brown sugar, butter, and milk to a boil in a small saucepan, whisking constantly. Remove from heat and stir in vanilla. Be careful, as mixture will bubble up violently!
  • 13. Gradually whisk in confectioners' sugar. Allow mixture to harden slightly and pour over completely cooled cake. Garnish with additional pecans, if desired.

Number Of Ingredients 18

2 sticks unsalted butter (226 grams), at room temperature, plus more to grease pan
2 1/2 cups all-purpose flour (315 grams), plus more to dust the pan
3 tablespoons (30 grams) plus 1/2 cup (80 grams) bourbon or rye whiskey
1/2 cup (90 grams) candied ginger, chopped
1 3/4 cup (330 grams) light brown sugar
4 large eggs, at room temperature
2 teaspoons (8 grams) baking powder
1 teaspoon (5 grams) baking soda
1 1/2 teaspoons (3 grams) ground cinnamon
1 teaspoon (5 grams) fine sea salt
1/2 teaspoon grated nutmeg
1 cup (227 grams) sour cream
1 tablespoon (15 grams) vanilla extract
1 1/2 teaspoon (5 grams) finely grated lemon zest
2 medium Granny Smith apples (about a pound, 454 grams), peeled, cored, and coarsely grated
1 cup (120 grams) finely chopped, toasted pecans
1/2 cup (100 grams) granulated sugar
Juice of 1/2 lemon (20 grams).

Steps:

  • Heat the oven to 325 degrees. Grease and flour a 12-cup bundt pan. In a small bowl, combine 3 tablespoons bourbon and the candied ginger. Let stand 10 minutes. 2. In the bowl of an electric mixer fitted with the paddle attachment, beat together the brown sugar and remaining butter on medium-high speed, until light and fluffy, about 5 minutes. Beat in the eggs, 1 at a time, until incorporated. 3. In a separate bowl, whisk together the remaining flour with the baking powder, baking soda, cinnamon, salt and nutmeg. In a separate bowl, whisk together the sour cream and vanilla. Pour in the bourbon from the ginger mixture (reserve ginger) and whisk until smooth. Stir in zest. 4. With the mixer on medium speed, add the dry mixture and sour cream mixture to the wet mixture in three additions, alternating between the two. Fold in the ginger, apples and pecans. Scrape the batter into the prepared pan. Bake until the cake is golden brown and a skewer inserted into the cake comes out dry, about 1 hour 10 minutes. Cool in the pan 20 minutes, then run a paring knife around the sides of the pan to release the cake; cool, flat side down, on a wire rack. 5. While the cake cools, combine the 1/2 cup granulated sugar and 1/2 cup whiskey in a small saucepan. Over low heat, gently stir until the sugar dissolves. Stir in the lemon juice and take off the heat. 6. While the cake cools, make 10 slits on top with a paring knife and pour half the bourbon-sugar mixture on the still-warm cake. When the cake is fully cool, flip it and pour the rest of the glaze on the other side, then flip again to serve. Yield: 10 to 12 servings.

APPLE DATE BUNDT CAKE

Apple Date Bundt Cake image

I found this recipe on another website. I have decreased considerably the amount of sugar originally called for and it is still fairly sweet. It is best made with Fuji or Granny Smith apples.

Provided by Irmgard

Categories     Dessert

Time 1h35m

Yield 1 cake, 20 serving(s)

Number Of Ingredients 13

2 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 tablespoon cinnamon
3/4 cup dates, coarsely chopped
3/4 cup walnuts, coarsely chopped
1 1/3 cups granulated sugar
4 eggs
1/3 cup vegetable oil
1/3 cup applesauce
1 tablespoon vanilla extract
2 medium apples
1 tablespoon fresh lemon juice

Steps:

  • Preheat the oven to 325 degrees F, with a rack in the middle of the oven.
  • Grease a 12-cup Bundt pan.
  • In a bowl, sift together the flour, salt, baking soda, and cinnamon.
  • Stir in the dates, nuts, and sugar.
  • In a large mixer bowl, beat the eggs, oil, applesauce, and vanilla until well blended.
  • Peel, core and chop the apples into 1/8" dice, sprinkling with lemon juice as you cut them to prevent discolouration.
  • Stir the flour mixture into the eggs.
  • The batter will be extremely thick.
  • Stir in the apples.
  • Spoon the batter into the prepared pan and bake for 65 to 75 minutes or until a toothpick inserted into the centre of the cake comes out with no moist crumbs on it.
  • Cool on a rack for 20 minutes and then invert.

Tips:

  • Choosing the Right Apples: Use a variety of apples that offer a balance of flavors and textures. A combination of sweet, tart, and firm apples works well. Some popular choices include Granny Smith, Honeycrisp, and Pink Lady.
  • Preparing the Apples: Peel and core the apples, then cut them into small chunks or thin slices. This will ensure that the apples cook evenly and distribute their flavor throughout the cake.
  • Mixing the Batter: Follow the recipe's instructions carefully to achieve the right consistency for the batter. Overmixing can result in a dense cake, so mix just until the ingredients are well incorporated.
  • Greasing and Flouring the Bundt Pan: Before pouring the batter into the pan, grease and flour it thoroughly. This will help the cake release easily after baking.
  • Baking the Cake: Bake the cake according to the recipe's instructions, checking for doneness with a toothpick inserted into the center. The toothpick should come out clean or with just a few moist crumbs attached.
  • Cooling the Cake: Allow the cake to cool in the pan for a few minutes before inverting it onto a wire rack to cool completely. This will prevent the cake from breaking.
  • Glazing the Cake: If desired, glaze the cooled cake with a simple glaze made from powdered sugar and milk or lemon juice. This adds a touch of sweetness and shine to the cake.
