I get recipe requests every time I make this cake. I think the original recipe came from Taste of Home. I have a Kitchenaid mixer with the shredder attachment and use that to shred up the carrot, apple, and even the toasted pecans, but any shredder will do, or you could chop with a good old-fashioned kitchen knife instead! Note: Be sure to both grease AND flour your tube pan as this cake is very moist and needs the flour to help it release from the pan! Enjoy!

I don't think I fiddled with it much; maybe I upped the apple content in my never-ending quest for truely apple-y apple cake. I haven't seen another apple cake with the praline topping.

1/2 cup butter
1 cup dark brown sugar (I use Sucanat)
2 eggs
1 3/4 cups soft unbleached flour
2 teaspoons baking powder
1 teaspoon vanilla
4 -6 large apples

2 tablespoons butter
1/2 cup sugar
1 egg

Steps:

  • Preheat the oven to 350°F Line the bottom of a 9" springform pan with parchment, and butter the pan.
  • Cream the sugar and beat in the eggs, one at a time, and the vanilla.
  • Sift the flour and baking powder into the butter and sugar.
  • Beat them in to form a smooth batter.
  • Scrape the batter into the prepared springform pan.
  • Wet your hands and pat it evenly into the pan.
  • Mix the cinnamon and sugar.
  • Peel the apples and cut them into thin slices.
  • Toss them in the cinnamon sugar and push them, on end, into the batter.
  • At first they will seem to be sticking very far out of the batter, but the apples will make the level rise as you go.
  • When all the apples are in- pack them in there- press them down slightly, so none stick out more than 1/2".
  • Sprinkle any remaining cinnamon sugar over the top.
  • Bake the cake for 45 minutes.
  • Meanwhile, cream the remaining butter and sugar, and beat in the remaining egg.
  • Spread this over the top of the cake and bake for 15 minutes more.

One 8-ounce package cream cheese, at room temperature
1 stick butter, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 lemon, juiced

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
  • In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
  • Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
  • Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
  • Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
  • Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

3/4 cup / 160 g superfine sugar
1/2 vanilla bean
2 free-range eggs, lightly beaten
3 large Granny Smith apples, peeled, cored, and cut into 3/8-inch / 1-cm dice
grated zest of 1 lemon
2 free-range egg whites
confectioners' sugar for dusting (optional)
Maple Icing:
7 tbsp / 100 g unsalted butter, at room temperature
scant 1/2 cup / 100 g light muscovado sugar
scant 6 tbsp / 85 ml maple syrup
8 oz / 220 g cream cheese, at room temperature

Steps:

  • 1. Grease an 8-inch / 20-cm springform cake pan and line the bottom and sides with parchment paper. Place the raisins and water in a medium saucepan and simmer over low heat until all of the water has been absorbed. Leave to cool.
  • 2. Preheat the oven to 325°F / 170°C. Sift together the flour, cinnamon, salt, baking powder, and baking soda and set aside.
  • 3. Put the oil and superfine sugar in the bowl of a stand mixer fitted with a paddle attachment (or use a whisk if you don't have a mixer). Slit the vanilla bean lengthwise in half and, using a sharp knife, scrape the seeds out into the bowl. Beat the oil, sugar, and vanilla together, then gradually add the eggs. The mix should be smooth and thick at this stage. Mix in the diced apples, raisins, and lemon zest, then lightly fold in the sifted dry ingredients.
  • 4. Whisk the egg whites in a clean bowl, either by hand or with a mixer, until they have a soft meringue consistency. Fold them into the batter in 2 additions, trying to maintain as much air as possible.
  • 5. Pour the batter into the lined pan, level it with an icing spatula, and place in the oven. Bake for 1 1/2 hours, until a skewer inserted into the center comes out clean. Remove from the oven and leave to cool in the plan.
  • 6. Once the cake is completely cold, you can assemble it. Remove from the pan and use a large serrated knife to cut it in half horizontally. You should end up with 2 similar disks. If the cake is very domed, you might need to shave a bit off the top half to level it.
  • 7. To make the icing, beat together the butter, muscovado sugar, and maple syrup until light and airy. You can do this by hand, or preferably, in a mixer, fitted with the paddle attachment. Add the cream cheese and beat until the icing is totally smooth.
  • 8. Using the icing spatula, spread a layer of icing 3/8 inch / 1 cm thick over the bottom half of the cake. Carefully place the top half on it. Spoon the rest of the icing on top and use the icing spatula to create a wavelike or any other pattern. Dust it with confectioners' sugar, if you like.

  • Make cake:
  • Preheat oven to 350°F. Butter and flour three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Combine apples and water in small saucepan. Cover; simmer over medium-low heat until apples are tender, about 20 minutes. Place in processor; purée until smooth. Cool purée. Sift 2 1/2 cups flour and next 5 ingredients into medium bowl. Toss currants with remaining 1 tablespoon flour in small bowl to coat; mix in walnuts.

  • Using electric mixer, beat butter and sugar in large bowl until blended. Beat in cream cheese, then maple syrup and flavoring. Chill until beginning to firm, about 20 minutes.

Tips:

  • For a more intense caramel flavor, use dark brown sugar instead of light brown sugar in the praline icing.
