1 cup peanut butter
2 medium Granny Smith apples, cored and thinly sliced
1/2 cup sugar
1 tablespoon ground cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees F.
  • Halve the muffins and spread a heaping tablespoon of peanut butter on each half. Layer the apple slices on the peanut butter. Mix the sugar, cinnamon and nutmeg together in a small bowl and sprinkle about 2 teaspoons on top of each muffin half.

3 cups sugar
3 eggs
3 teaspoons vanilla extract
7-1/2 cups all-purpose flour

Coarse sugar, optional
54 ribbons (16 inches x 1/8 inch)

Steps:

  • In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and baking soda; gradually add to creamed mixture alternately with buttermilk.
