1 (9 inch) unbaked double pie crusts, refrigerated
4 cups peeled peeled cored and sliced apples
3 cups peeled peeled cored and sliced ripe fresh pears
1/3 cup sugar, plus
2 tablespoons sugar
1 cup fruity white wine (Chardonnay or Chenin Blanc)
2 1/2 tablespoons cornstarch
1/2 teaspoon grated lemon zest
1/8 teaspoon vanilla extract
1 pinch salt (a big pinch)
2 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • In a large mixing bowl, combine the apples, pears, and 1/3 cup sugar; mix well.
  • Add in the wine and mix again; set aside for 1 hour, stirring occasionally.
  • Drain off all the juice and transfer drained juice to a saucepan; bring to a boil.
  • Continue to boil gently until reduced to 1/2 to 2/3 cup.

1 1/2 pounds Anjou pears (about 3)
6 tablespoons unsalted butter
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 teaspoons grated peeled fresh ginger
1/4 teaspoon kosher salt
1 tablespoon fresh lemon juice
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 14-ounce package refrigerated pie dough (2 rounds)
1 large egg, lightly beaten
Turbinado sugar, for sprinkling

Steps:

  • Peel the apples and pears; slice 1/2 inch thick. Melt the butter in a large skillet over medium-high heat. Add the apples, pears, granulated sugar, brown sugar, ginger and salt. Cook, stirring occasionally, until mostly tender, 20 to 25 minutes (reduce the heat if the skillet looks dry). Remove from the heat and stir in the lemon juice, flour and cinnamon. 1 1/2 ounces walnuts, toasted and chopped (1/2 cup)
1 tablespoon granulated sugar
1 teaspoon coarse salt
2 sticks cold unsalted butter, cut into small pieces
1/3 to 1/2 cup ice water
5 to 6 Granny Smith apples
3 firm-ripe Bosc pears
1/4 teaspoon salt
2/3 cup granulated sugar
1 whole vanilla bean, split and scraped
Juice of 1/2 lemon (about 5 teaspoons)
1/2 stick unsalted butter
3 tablespoons all-purpose flour
1 large egg, lightly beaten
Fine sanding sugar

Steps:

  • Crust: Pulse flour, walnuts, granulated sugar, and salt in a food processor until walnuts are finely chopped. Add butter; pulse until mixture resembles coarse meal, 8 to 10 seconds. Drizzle pi cup ice water evenly over mixture. Pulse until mixture comes together when pressed in your hand (dough should not be wet or sticky). If dough is too dry, add more ice water, 1 tablespoon at a time, and pulse.
  • Lay out 2 pieces of plastic wrap. Empty half the dough onto each piece. Bring edges of wrap together to gather dough. Press into disks. Roll out disks, still wrapped in plastic, to 1/2-inch-thick rounds (8 inches in diameter). Refrigerate at least 45 minutes and up to 2 days. Let stand at room temperature 5 to 10 minutes before rolling.
  • Roll out 1 disk of dough into a 12-inch round (a generous 1/8-inch thickness) on a lightly floured surface. Fit into a 9-inch pie plate, and trim edge, leaving a 1-inch overhang. Roll out remaining disk of dough to a generous 1/8-inch thickness. Transfer to a parchment-lined baking sheet, and refrigerate, along with dough in pie plate, until firm, about 1 hour.
  • Filling: Peel and core apples, and cut into eighths (you should have about 7 cups). Peel and core pears, and cut into eighths (you should have about 5 cups). Toss apple and pear slices with salt, granulated sugar, vanilla seeds, and lemon juice. Melt butter in a large saute pan over high heat. Add fruit mixture, and cook, stirring, 5 minutes. Reduce heat to medium-high, and cook until fruit is softened, about 5 minutes more. Stir in flour, and cook 1 minute. Remove from heat; let filling cool completely.
  • Preheat oven to 425 degrees with rack in lower third of oven. Cut dough on baking sheet into 3-inch-wide strips. Pour filling into dough-lined pie plate, and brush edge of dough with some egg wash. Weave dough strips into a lattice over filling, and press overhang onto edge of crust. Trim edge, fold under, and crimp as desired. Brush top of pie with more egg wash, then sprinkle with sanding sugar. Freeze until firm, about 30 minutes.
  • Bake pie 15 minutes. Reduce oven temperature to 375 degrees, and bake until crust is golden and filling is bubbling through lattice, about 1 hour. Let cool completely on a wire rack.

2 large egg yolks
1 teaspoon apple cider vinegar
3/4 cup granulated sugar
2 tablespoons chopped fresh rosemary
1 3/4 cups dry red wine, divided
2 tablespoons unsalted butter, cut into pieces
5 teaspoons cornstarch
1/2 teaspoon ground cinnamon
5 teaspoons all-purpose flour plus more for dusting
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
3 pounds firm but ripe pears (such as Comice, Anjou, or Bartlett), peeled, cored, thinly sliced
1 large egg, beaten to blend
3 tablespoons granulated sugar or raw sugar

Steps:

  • DO AHEAD: Dough can be made 2 days ahead. Keep chilled, or freeze up to 3 months.
  • Bring granulated sugar, rosemary, and 1 1/2 cups wine to a boil; cook, stirring occasionally, until reduced to about 2/3 cup, 5-8 minutes. Strain through a fine-mesh sieve into a small bowl. Whisking constantly, gradually add butter and whisk until syrup is smooth.
  • Whisk cornstarch, cinnamon, 5 teaspoons flour, and remaining 1/4 cup wine in a small saucepan set over medium heat; cook, whisking constantly, until thickened, about 1 minute. Slowly add syrup, whisking until smooth, then stir in vanilla and salt. Chill until cool, about 30 minutes.
  • Place a rack in lower third of oven and preheat to 375°F. Toss pears and red wine syrup in a large bowl. Roll out 1 disk of dough on a lightly floured surface into a 14" round. Transfer to a 9" pie dish. Lift up edges and allow dough to slump down into dish. Trim, leaving about 1" overhang. Pour filling into crust and chill.
  • Meanwhile, roll out remaining disk of dough into a 14" round. Using a pizza cutter or a sharp knife, cut into twelve 1"-wide strips. Arrange 6 strips crosswise across top of pie, spacing about 1" apart.
  • Arrange remaining 6 strips lengthwise across top of pie, lifting crosswise strips and weaving lengthwise strips over and under to form a lattice. Brush edge of dough with beaten egg and press ends of strips and bottom crust together to seal. Trim strips to same length as bottom crust, then fold bottom crust over lattice strips; crimp edge. Brush crust with beaten egg and sprinkle with granulated sugar. Chill in freezer 15 minutes.
  • Place pie dish on a rimmed baking sheet and bake 30 minutes. Reduce oven temperature to 350°F, rotate pie, and continue baking, tenting with foil if crust is browning too quickly, until juices are bubbling and crust is golden brown, 60-75 minutes longer. Transfer to a wire rack and let cool at least 4 hours before slicing.
  • DO AHEAD: Pie can be baked 1 day ahead. Store wrapped tightly at room temperature.
