APPLE GINGERBREAD SKILLET CAKE

Apple Gingerbread Skillet Cake image

This gingerbread recipe came from my grandmother, and we always ate it with warm applesauce. I adapted it into a one-pan dessert by layering the apples around the bottom of a cast-iron skillet and topping them with the gingerbread batter. The skillet creates a wonderfully thick crust on the gingerbread. -Mary M. Leverette, Columbia, South Carolina

Time 50m

Yield 10

Number Of Ingredients 8

1 cup butter
1 ½ cups white sugar, divided
6 each Granny Smith apples - peeled, cored, and diced
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 cups baking mix (such as Jiffy®)
1 cup milk
6 ounces shredded sharp white Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine butter and 1 1/4 cups sugar in a 9-inch oven-safe skillet over medium heat. Cook and stir until sugar dissolves and mixture begins to caramelize, 5 to 10 minutes. When mixture starts to simmer, add diced apples and sprinkle with cinnamon and nutmeg. Gently press on the apples with a spatula until coated with sugar mixture and simmer, without stirring, until they begin to soften, about 5 minutes.
  • Combine baking mix, milk, shredded Cheddar cheese, and remaining 1/4 cup sugar in a bowl and stir until consistency is similar to a waffle batter. Spoon mixture evenly over the apples in the skillet; no need to be too precise as it will spread out while baking.
  • Bake skillet in preheated oven until batter reaches a firm consistency and is golden brown, 20 to 25 minutes. Remove from the oven and allow to cool on the stovetop until the caramelized sugar thickens a bit, about 5 minutes. Spoon servings onto individual plates, drizzle with caramel liquid, and serve while warm.

UPSIDE-DOWN APPLE CAKE IN CAST IRON SKILLET - MY RECIPE -

Upside-Down Apple Cake in Cast Iron Skillet - My Recipe - image

I got two of my Mom's cast-iron skillets. In one of them, i make eggs, omeletts, fried chicken, fried vegetables, fried breaded meats, etc. In the other one, i make cakes and desserts because i don't like to mix flavors in the same one. I have made this apple cake in it and it is very good, so am sharing my recipe here. Enjoy it like we do.

Time 1h25m

Yield 10 serving(s)

Number Of Ingredients 13

1/3 cup light butter
1/2 cup splenda brown sugar
1 teaspoon ground cinnamon (or use ground apple pie spices)
3 medium green apples, peeled, cored and sliced
1 (18 ounce) box spice cake mix (i use Duncan Hines with less sugar)
1/2 cup light butter, melted
1 cup ligh sour cream
1/3 cup light dark corn syrup
2 eggs (I use 1 cup egg beaters)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 green apple, chopped
1/2 cup pecans, chopped (optional)

Steps:

  • Place your oven rack in the middle of the oven and preheat oven to 350ºF.
  • Prepare the topping, melting the 1/3 cup butter in a 10" cast iron skillet ((2" deep), over low heat.
  • Remove skillet from heat and stir in the brown sugar and ground cinnamon (or apple pie spices) using a fork.
  • Spread this mixture evenly over the bottom of the skillet and arrange the apple slices over the butter/sugar mixture in the skillet.
  • In a mixer, blend cake mix, 1 stick melted butter, sour cream, dark corn syrup, eggs and ground cinnamon.
  • Beat on low speed for 1 minute. Increase speed to medium and beat 2 minutes longer until creamy.
  • Pour the batter over the top of the apples in the skillet and then place the skillet in the oven and bake at 350ºF. for 40-45 minutes and bake until the cake rises high in the skillet, (it will spring back when lightly pressed with your finger when it's done).
  • Remove skillet and cool cake in the pan for 5-10 minutes and then run a knife around the edges of the cake to loosen it from the sides of the pan and carefully flip upside down onto a serving plate.
  • Cool completely for about 15 minutes and serve warm with vanilla ice cream if you like.
  • I have made this cake with Duncan Hines Caramel flavor cake mix and the taste is excellent, too.
  • NOTE: this cake can also be made in these baking pans. Just prepare the butter, brown sugar and spices in a skillet over the stove and then pour this mixture in the baking pan sprayed with cooking oil, add the apple slices, pour the batter and bake it.
  • Here is a guide to bake the cake in those pan sizes:
  • Pan Size: 13x9 inches - Oven Temp: 350ºF. - Baking time: 30-35 minutes.
  • Pan Size: 9x9 inches - Oven Temp: 350ºF. - Baking time: 35-40 minutes.
  • Pan Size: 8x8 inches - Oven Temp: 325ºF. - Baking time: 50-55 minutes.

SKILLET APPLE CAKE WITH CARAMEL FROSTING

Skillet Apple Cake With Caramel Frosting image

From The Cast Iron Skillet Cookbook by Sharon Kramis and Julie Kramis Hearne. "With its rich caramel frosting, this cake has the flavour of caramel apples. It's so easy to prepare; everything is mixed together in one bowl, then baked, frosted and served in the cast iron skillet." This cake stays moist for a few days, even in our dry climate. The frosting is delicious!

SKILLET APPLE STREUSEL CAKE

Skillet Apple Streusel Cake image

Using a cast iron skillet is just a different country way of making this cake you can use a traditional bundt pan if you wish. But using a skillet requires keeping a close eye on it since cast iron retains heat much better than other baking pans. You can use cut up pears instead of apples for a different twist or even use both apples and pears. Adding other fruits for the occasion and season is a great way to give someone a special treat, like cranbverries, raisins, raspberries. Even just sprinkling some grated coconut on top or using in cake mixture is a different treat as well.
