It has come to the rescue for many impromptu occasions when I've had to adjust the serving sizes to unexpected numbers. 2 boneless skinless chicken breast halves
11/2 teaspoon dried rosemary, crushed
2 thin slices fully cooked ham
1 medium tart apple, peeled and thinly sliced, divided
1 tablespoon canola oil
2 thin slices Swiss cheese
1 tablespoon apple juice or chicken broth
Paprika

Steps:

  • Flatten chicken breasts to 1/4-in. thickness; rub with rosemary. Top each with a ham slice and a few apple slices; roll up tightly. Secure with toothpicks. Place in a greased 1-qt. baking dish. Drizzle with oil. , Bake, uncovered, at 350° for 20 minutes. Top with cheese and remaining apple slices; drizzle with apple juice. Sprinkle with paprika. Bake 10-15 minutes longer or until chicken juices run clear and cheese is melted. Discard toothpicks.

My brother would eat it all if he was allowed to and now my children who are both little love this dish. For people on a low budget this is an easy meal to make and it is easy to reheat. 8 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of chicken soup
⅓ cup water
8 slices Swiss cheese
2 cups Italian seasoned bread crumbs
½ cup butter

Steps:

4 boneless skinless chicken breasts
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
2 apples, unpeeled,cored and thickly sliced
1 onion, sliced
1/2 cup apple cider or 1/2 cup apple juice
1 1/2 teaspoons cider vinegar
1 teaspoon cornstarch

Steps:

  • Sprinkle chicken with thyme, salt and pepper.
  • In large frypan, heat half of the oil over medium high heat; brown chicken all over.

3 medium-sized cooking apples
1 1/2 tablespoons butter
1 teaspoon safflower or peanut oil
1 3-pound chicken, cut in serving pieces
Coarse salt and freshly ground pepper
1/2 cup heavy cream
1/4 cup Calvados or cognac

Steps:

  • Peel, core and slice the apples in pieces a quarter inch thick. Fry until golden in the butter in a large heavy frying pan. Remove and set aside.
