- On a bench dusted with flour, roll out the puff pastry until it is just shy of 1/4 inch thick and completely covers the circumference of the 12-inch skillet that you will use for baking the tart tatin, ensuring that there is at least 1 inch of overhang all around the edge of the pan. Place the sheet of puff pastry on a parchment lined sheet tray in the fridge to relax for 30 minutes or more.
- Position the rack in the center of the oven and preheat the oven to 400°F. Place the frying pan over medium heat. Melt the butter in the pan, tilting it to evenly coat the bottom. Sprinkle the sugar over the butter and tilt the pan to evenly disperse the sugar. When the sugar just begins to melt and brown slightly, place the fruit in the pan. Saute the fruit on each side for two minutes, taking care not to dent the fruit on the round side that will face up in the final tart. The fruit should only be slightly cooked. Add the cider to deglaze the pan and position the fruit around the pan, packed tightly together, with the cut side facing up. Remove the pan from heat. Cover the top of the apples with the chilled pastry and tuck all of the overhanging dough down along the inside of the pan, so it creates a crust around the apples. Place the pan in the oven and bake for 20 minutes at 400°F, then reduce the temperature to 350°F and bake until the crust is a deep golden brown and very firm to the touch with the juices bubbling vigorously beneath the crust, about 20 minutes longer. Remove the tart from the oven and allow it to sit for one minute.
- Using oven mitts or kitchen towels, place an inverted plate of greater size than the pan over the top of the tart. Grasp the plate and hold it firmly against the pan. Working swiftly, invert the pan so that the plate is on the bottom and the tart is flipped with the fruit on top. Remove the pan and take caution, the juices from the fruit will be very hot. Allow them to drip out of the pan and onto the tart. Allow the tart to cool for 10 minutes before serving warm, or place in the oven for 5 minutes before serving.

CLASSIC APPLE TART
Apple tart is my family's favorite dessert. I love it because it makes the house smell amazing and the tart looks so polished and beautiful (taking a few extra minutes to fan out the apples makes it look like it came from a bakery!). This is a French-style apple tart, not an apple pie, meaning a wedge of the tart is thinner and neater than a slice of all-American apple pie. Try it topped with ice cream for that delicious a la mode taste. Rolling the dough for the tart makes for a finer-textured crust, but on many occasions I have simply pressed the crust into place with great results.

- Set the cubed butter on a plate and place it in the freezer for 15 minutes. Fill a cup with ice and water and set aside. Place 1 1/2 of the flour, 1 8 teaspoon of the salt, and 1 tablespoon of the sugar in the bowl of a food processor and pulse to combine. Take the butter out of the freezer and add it to the flour. Pulse the mixture until it looks like wet sand, about 10 seconds. Add 2 to 3 tablespoons of the ice water and pulse until the dough comes together into a ball.
- Lightly flour your work surface and place the dough on top. Then lightly flour the top of the dough and roll to about a 10- to 11-inch circle, sprinkling more flour under and on top of the dough as necessary. Gently drape the dough over the rolling pin and transfer it to a 9- or 9 1/2-inch fluted tart pan (ideally one with a removable bottom). Fit the dough into the bottom and up the sides of the pan as evenly as possible and press off excess dough from the fluted rim. Set the tart pan on a baking sheet and place in the refrigerator for 15 minutes.
- Preheat the oven to 350degreesF. Peel, core, and quarter the apples and then thinly slice them lengthwise. Place the apples in a large bowl and toss with the lemon juice, the cinnamon, and the remaining 1 tablespoon sugar and 1 8 teaspoon salt. Remove the baking sheet with the tart shell from the refrigerator. Arrange the apples in concentric circles so they overlap slightly. Brush the edges of the crust with the melted butter and then bake until the edges are golden and the apples have cooked down, about 1 hour. Cool for 15 minutes before slicing and serving.

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or grease with nonstick cooking spray.
- Dust a cutting board with flour and unfold the puff pastry onto it. Dust more flour over the puff pastry and gently roll out the creases. Transfer the puff pastry sheet to the parchment paper-lined baking sheet.

- Cut the cold butter and cream cheese into the flour with a knife or pastry blender until the mixture resembles coarse crumbs. (This can also be done in a food processor: pulse the cold butter into the flour until the mixture resembles cornmeal; add the cream cheese and pulse until it's the size of small peas.) When you squeeze a handful of the mixture, it should form a ball. Shape the dough into a round disk, wrap it in plastic, and refrigerate for at least 1 hour.
- Toss the sliced apples and pear with the orange juice. Whisk together the brown sugar, cinnamon, nutmeg, cardamom, and cornstarch. Toss the fruit with the sugar-spice mixture and set aside.
- Preheat an oven to 375 degrees F (190 degrees C). Set out an 8-inch tart pan, or, if you'll be making a free-form tart (galette), lightly grease a baking sheet.

- Combine flour, salt and sugar in a food processor; pulse once or twice. Cut 8 tablespoons butter into chunks, and add it and egg yolk to flour mixture. - Pour water, flour, butter, salt, egg and baking powder into the bowl.
- Knead the dough for a few minutes until is soft and not sticky.
