1 cup sugar, divided
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour

3 tablespoons apricot preserves or flavor of your choice
1/3 cup butter, melted
2 tablespoons water
3/4 cup finely chopped hazelnuts or nuts of your choice
7 ounces dark chocolate candy coating, melted

Steps:

  • Preheat oven to 350°. In a small bowl, cream butter and 1/2 cup sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture., Press dough into a greased 8-in. square baking pan; spread with preserves. 1/2 cup sugar
DOUGH:
2/3 cup shortening
3 tablespoons 2% milk
1-1/3 cups sugar
2 large eggs, room temperature
1 teaspoon lemon extract
4 cups cake flour
2 teaspoons baking powder
1 teaspoon salt
Confectioners' sugar, optional

Steps:

  • In a small saucepan, cook apricots and water over low heat for 45 minutes or until the water is absorbed and apricots are soft. Cool slightly; transfer to a blender. Cover and process until smooth. Add sugar; cover and process until blended. Set aside., In a large saucepan over low heat, melt shortening with milk. Remove from the heat; stir in sugar. 3/4 cup apricot jam
1 cup white chocolate chips

Steps:

  • Melt butter and 1 cup white chocolate chips in small saucepan, stirring until smooth; set aside.

2/3 cup firmly packed light brown sugar

1 stick (1/2 cup) cold unsalted butter, cut into bits

  • Make apricot filling:
  • In a 1 1/2-quart heavy saucepan combine apricots, granulated sugar, and water and simmer, covered, 15 minutes. Remove lid and simmer mixture, stirring and mashing apricots, until excess liquid is evaporated and filling is thickened. Stir in vanilla.
