1 ½ cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
6 tablespoons white sugar
1 egg
2 tablespoons butter or margarine
¼ cup dry milk powder
⅔ cup water
1 teaspoon vanilla extract
2 cups pitted and diced fresh apricots
¼ teaspoon ground cinnamon, or to taste
1 tablespoon white sugar, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 C).
  • Place the flour, salt, and baking powder in a large bowl. In a separate bowl, cream together the sugar, egg, and butter until smooth. Mix the powdered milk, water, and vanilla into the batter, stirring until well blended. Pour the batter into the flour and beat until smooth.
  • Spread the batter into a greased 8 inch square pan, and sprinkle the diced apricots evenly over the top. Dust with cinnamon and sugar.
  • Bake in the preheated oven approximately 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

1 lb fresh apricots (400g)
2 cups all-purpose flour* (260g)
2 tsp baking powder
1 tsp baking soda
1/3 tsp salt
2/3 cup sugar (130g)
3/4 cup soy milk (180ml, or other non-dairy milk)
3 tbsp non-dairy yogurt (45g, or sub unsweetened apple sauce)
1/2 cup oil (120ml, or vegan butter*)
2 tbsp lemon juice (or sub apple cider vinegar)
1 tbsp lemon zest (optional)
2 tsp vanilla extract
4 tbsp shredded coconut (optional)
coconut flakes (or almonds)
2 tbsp brown sugar (to sprinkle)

Steps:

  • Preheat the oven to 350°F (180°C). Lightly grease the sides of a 9-inch springform pan and line the bottom with parchment paper (*as shown in the pics above).
  • Cut the apricots into halves and remove the core. If they're not fully ripe, cut into quarters or thinner slices as I did (*see pics above).
  • In a mixing bowl whisk together the flour, baking powder, baking soda, salt, and sugar.
  • To a measuring jar add the non-dairy milk, yogurt, oil, lemon juice, lemon zest, and vanilla extract. Mix to combine.
  • Pour the wet mixture into the flour mixture and stir using a spatula just until combined. Fold in shredded coconut as desired.
  • Transfer the batter to the prepared springform pan. Place the sliced apricots on top, then sprinkle with coconut flakes and brown sugar.
  • Bake for 50-60 minutes or until a skewer inserted in the center of the cake comes out almost clean with just a few crumbs attached.
  • Let cool before serving. Enjoy!

1/2 teaspoon ground cardamom or 1/2 teaspoon nutmeg

  • Generously spray a 1-quart casserole or souffle dish with nonstick coating; set aside.
  • In a large bowl combine 1 cup of the flour, the yeast, and the cardamom or nutmeg.

1 cup granulated sugar

1 15 3/4-ounce can apricots, well drained

Steps:

  • 1. Position a rack in the center of the oven and heat to 350°F. Lightly butter an 11x8-inch glass baking dish.
  • 2. Beat the butter in a medium bowl with a handheld electric mixer on high speed until smooth, about 1 minute. Add the sugar and beat until the mixture is light in color and texture, about 2 minutes. Beat in the eggs, one at a time, beating well after each addition (don't be concerned if the mixture looks slightly curdled). Beat in the vanilla. Sift the flour, baking powder, and salt together and stir into the batter, then stir in the lemon juice and zest.
  • 3. Spread evenly in the pan. Arrange the apricots over the batter, cutting them into halves or quarters if necessary to give the cake a uniform appearance. 1/3 cup biscuit/baking mix
1/3 cup sugar
2 tablespoons cold butter

Steps:

  • In a large bowl, combine the biscuit mix and sugar. Whisk the egg, milk and oil; stir into dry ingredients just until moistened. Fold in chips. Pour into a greased 9-in. round baking pan., Drop preserves by teaspoonfuls over batter. Cut through batter with a knife to swirl the preserves., For topping, combine biscuit mix and sugar in small bowl; cut in butter until crumbly. 3/4 cup dried apricot
3/4 cup dried prune
3 cups flour
1/2 tablespoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup softened butter
1 1/2 cups sugar
4 eggs
1/2 tablespoon vanilla
1 cup sour cream
1/2 cup firmly packed light brown sugar
2 tablespoons softened butter
2 tablespoons flour
1 teaspoon cinnamon
2 tablespoons icing sugar (optional)

Steps:

  • Preheat oven to 350*F.
  • Butter a 10" tube or Bundt pan and dust with flour.
  • Coarsely chop apricots and prunes. Toss to combine.
  • Sift together flour, baking soda, baking powder and salt. Set aside.
  • Beat butter until fluffy.
  • Gradually beat in sugar, then eggs, one at a time.
  • Add vanilla.
  • Blend in flour mixture, alternately with sour cream, beginning and ending with flour mixture. Blend until just smooth. Gently fold in prunes and apricots.
  • Mix the first four streusel ingredients with a fork until crumbly. (Will make approximately 1 cup of streusel). Turn 1/3 of batter into prepared pan, spreading evenly.
  • Sprinkle with 1/3 of streusel mixture.
  • Repeat, layering the remaining batter and streusel twice.
  • Bake 55 to 60 minutes, or until cake tester comes out clean.
  • Let cool in pan 20 minutes.
  • Remove from pan to platter.
  • Sift icing sugar over top if desired.
  • This cake can be served warm.
