Tips:

  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Use high-quality apricot jam: The flavor of the jam will shine through in the cookies, so it's important to use a good one. Look for a jam that is made with real apricots and has a nice, thick consistency.
  • Don't overfill the cookies: The jam will spread as the cookies bake, so don't put too much in each cookie. Otherwise, the jam will overflow and make a mess.
  • Bake the cookies until the edges are golden brown: This will ensure that the cookies are cooked through but still soft and chewy.
  • Let the cookies cool completely before serving: This will give the jam time to set and the cookies time to firm up.

Conclusion:

Apricot pecan thumbprint cookies are a delicious and easy-to-make treat that are perfect for any occasion. They're made with a simple dough that is filled with apricot jam and topped with a pecan half. The cookies are soft and chewy, with a sweet and tangy flavor. They're sure to be a hit with everyone who tries them!
