Time 30m

Number Of Ingredients 12

1 cup raisins
2 ½ cups water
½ cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon maple flavored extract
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
  • Place the raisins and water into a small saucepan. Bring to a boil, and cook for 3 minutes. Drain, and reserve the liquid. Set aside to cool slightly.
  • In a large bowl, cream together the butter and sugar until smooth. Mix in the egg and vanilla until well blended. Combine the flour, baking soda, salt and cinnamon; stir into the batter alternately with the raisin water. Set aside 1/4 cup of the raisin liquid to use for the frosting. Mix in raisins last. Spread the batter evenly into the prepared pan.
  • Bake for 20 minutes in the preheated oven, or until the top is lightly browned. While the cake is baking, stir together the reserved raisin water, maple extract and confectioners' sugar to make a thin glaze. Pour over the cake while still hot. Cool, then cut into squares to serve.

Yield Makes about 3 dozen

Number Of Ingredients 13

Unsalted butter, softened, for baking sheet
2 cups raisins (about 13 ounces)
1 cup sugar
1 teaspoon cornstarch
1/2 cup apple cider
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons coarse salt
1 1/4 cups vegetable shortening
1 1/4 cups packed light-brown sugar
1 large egg
1 1/4 teaspoons pure vanilla extract
2 1/2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees. Butter a 10-by-15-inch rimmed baking sheet. Line bottom with parchment paper, and butter parchment; set sheet aside.
  • Make filling: Pulse raisins and sugar in a food processor until almost pureed. Transfer to a saucepan. Whisk cornstarch into 1 cup cold water; whisk into raisin mixture. Stir in cider. Simmer over medium-low heat, stirring occasionally, until mixture thickens and sugar has dissolved, about 6 minutes.Let cool completely.
  • Make dough: Whisk together flour, baking soda, and salt in a medium bowl; set aside. Put shortening in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Add brown sugar, and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Mix in oats.
  • Press half the dough into prepared baking sheet. Spread raisin filling evenly over top of dough. Crumble remaining dough on top of filling using your fingers, gently pressing down so that topping covers filling. Bake, rotating sheet halfway through, until top is golden brown, about 35 minutes. OLD FASHIONED RAISIN BARS WITH CREAM CHEESE FROSTING

Old Fashioned Raisin Bars With Cream Cheese Frosting image

I got this from recipelink.com. I had a coffee/raisin bar type recipe and I can't find it. This seems similar. I really want to try these!

Provided by Recipe Junkie

Categories     Bar Cookie

Time 30m

Yield 24-36 bars

Number Of Ingredients 15

1 cup hot strong coffee
1 cup raisins
1 cup sugar
1/2 cup oil
1 egg, beaten
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup nuts, chopped
1 (8 ounce) package cream cheese, softened
1 (1 lb) box powdered sugar
2 teaspoons vanilla
1/2 cup margarine, softened

Steps:

  • Pour hot coffee over raisins, cool to lukewarm.
  • Stir in sugar, oil and egg.
  • Stir together flour, soda, cinnamon, nutmeg and salt.
  • Add raisin mixture and mix well.
  • Pour batter into greased 15 x 10 x 1 inch baking pan.
  • Bake at 350 degrees for 15-20 minutes.
  • Mix together all ingredients for frosting.
  • Cool. Spread with icing.

Tips:

  • Use fresh ground spices for the best flavor. Pre-ground spices can lose their potency over time.
  • Do not over-mix the batter. Over-mixing can result in a tough, dense bar.
  • If you do not have a baking sheet, you can use a 9x13 inch jelly roll pan.
  • Be sure to line the baking sheet with parchment paper or a silicone baking mat to prevent the bars from sticking.
  • Bake the bars until a toothpick inserted into the center comes out clean.
  • Allow the bars to cool completely before cutting them into squares. This will help to prevent them from crumbling.
  • Store the bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 2 weeks.

Conclusion:

Spice raisin bars are a delicious and easy-to-make treat that are perfect for any occasion. They are a great way to use up leftover spices and raisins, and they are sure to be a hit with your family and friends.
