BACALAO FRITTERS

Bacalao Fritters image

Provided by Molly O'Neill

Categories     appetizer

Time 15m

Yield 6 servings

Number Of Ingredients 4

1 1/2 pounds boneless, dry salted bacalao (cod)
1/2 cup beer
1 cup all-purpose flour
3 cups corn oil, for frying

Steps:

  • In a large bowl, cover the bacalao with cold water by several inches. Soak, refrigerated, for 24 hours, changing the water every 6 to 8 hours. Drain for the last time and pat dry with paper towels. Use your hands to shred the bacalao finely into a large, clean bowl.
  • In a separate small bowl, combine the beer with 1/2 cup of water. Whisk in the flour until no lumps remain. Stir mixture into the shredded bacalao until well combined.
  • Heat the corn oil in a large, deep skillet over medium-high heat. When the oil is hot, working in batches, use a spoon to mold the fish into flattened balls about 2 inches in diameter. Carefully slip them into the oil (being careful not to overcrowd the pan). Cook, turning once, until golden brown, about 6 minutes. Drain on paper towels. Serve warm with garlic-walnut sauce (see recipe).

Tips:

  • Choose fresh cod. The fresher the cod, the better the bacalao frito will be. Look for cod that is firm and white, with no signs of spoilage.
  • Soak the cod before frying. Soaking the cod in water or milk helps to remove the salt and rehydrate the fish. This will make the bacalao frito more tender and flavorful.
  • Use a light batter. A heavy batter will weigh down the bacalao frito and make it greasy. A light batter made with flour, eggs, and water is all you need.
  • Fry the bacalao frito in hot oil. The oil should be hot enough to sizzle when the bacalao frito is added. This will help to create a crispy crust and prevent the fish from sticking to the pan.
  • Do not overcrowd the pan. Frying too much bacalao frito at once will lower the temperature of the oil and make the fish greasy. Fry the bacalao frito in batches if necessary.
  • Serve the bacalao frito immediately. Bacalao frito is best served hot and crispy. Serve it with a dipping sauce, such as aioli or tartar sauce.

Conclusion:

Bacalao frito is a delicious and easy-to-make dish that is perfect for any occasion. With its crispy crust and tender, flavorful fish, bacalao frito is sure to be a hit with everyone who tries it. So next time you are looking for a new recipe to try, give bacalao frito a try. You won't be disappointed!
