¾ cup mayonnaise

1 teaspoon lemon juice
1 dash Worcestershire sauce
salt and ground black pepper to taste
12 leaves romaine lettuce
1 large avocado, sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Stir chicken, bacon, tomato, and celery together in a bowl.

24 strips (cut 1/4 inch thick) bacon, (1 pound)
2 1/2 bunches lettuce, such as romaine, Bibb, or green oakleaf
1 cup Avocado Dressing for BLT Salad
2 pounds tomatoes, preferably red and yellow
1 pint cherry tomatoes
Salt and freshly ground black pepper

Steps:

  • Heat oven to 350 degrees. Arrange bacon strips on a wire rack set over a baking pan. Place pan in oven until bacon is golden brown and crisp, about 40 minutes. Remove from oven, being careful of the bacon fat that has collected under the rack, and set aside.
  • Arrange lettuce in the bottom of a salad bowl; drizzle with half the avocado dressing. Cut tomatoes into 1/4-inch-thick slices; cut cherry tomatoes, depending on size, in half. Arrange tomato slices over lettuce; scatter cherry tomatoes over tomato slices.
  • Arrange whole bacon strips over tomatoes. Drizzle with remaining avocado dressing, season with salt and pepper to taste, and serve immediately.

6 mushrooms, sliced
1 medium avocado, sliced

3 hard-boiled eggs, chopped
1 tablespoon red onion, finely chopped
2 tablespoons toasted nuts (optional, I used walnuts)
4 ounces blue cheese
3 tablespoons plain yogurt

1 teaspoon fresh dill (or 1/2 t dried dill)
1/4 teaspoon salt

Steps:

CROUTON INGREDIENTS
4 slice bacon
1 tsp sea salt
1 tsp freshly ground pepper
2 Tbsp canola oil
4 slice bread, cubed
MAIN SALAD INGREDIENTS
1 lb lettuce leaves, (any kind except iceberg)
1/2 lb bacon
2 large tomatoes, diced
DRESSING INGREDIENTS
1/2 c mayonnaise (not salad dressing)
2 Tbsp red wine vinegar
2 Tbsp bacon drippings
1/4 c fresh basil, finely chopped

Steps:

  • 1. In a skillet, cook the 4 slices of bacon until they are crisp, but not burnt. Remove from skillet, crumble when cooled enough to handle and set aside. Pour off, but SAVE the bacon drippings to make the dressing. (See below)
  • 2. Add the salt, pepper and canola oil to the skillet and bring it back up to medium-high heat. Add the cubed bread and toss well. Cook and stir until the bread is a bit crispy on the outside, but not burnt.
  • 3. Tear the cleaned lettuce into bite-sized pieces and place in a large salad bowl. Add the tomatoes. Add the 1/2 pound of cooked and crumbled bacon and the 4 crumbled slices of bacon used to make drippings for the dressing(from step 1) Toss it to mix it well.
  • 4. Make the Dressing: Combine all the dressing ingredients in a glass jar with a lid, and shake it all vigorously until well-blended. If it seems too think, just add another teaspoon of vinegar. Too thin, add a bit more mayo.
