4 tart green apples
½ cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
  • Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

6 7- to 8-ounce Golden Delicious apples
6 tablespoons toffee bits (such as Skor)
3 tablespoons bourbon
3 tablespoons unsalted butter
1 1/2 cups apple cider
3 tablespoons mild-flavored (light) molasses
1 tablespoon sugar
1/4 teaspoon ground ginger
Vanilla ice cream

Steps:

  • Preheat oven to 350°F. Peel skin off top third of each apple. Using small melon baller, scoop out stem and core, leaving bottom intact. Stand apples in 11x7x2-inch baking dish. Place 2 tablespoons toffee bits around apples in dish. Divide remaining bits among cavities of apples. Add 1/2 tablespoon bourbon and 1/2 tablespoon butter to cavity of each apple. Whisk cider, molasses, sugar and ginger in bowl; spoon over and around apples.
  • Bake apples until tender, basting often with pan juices, about 1 hour 20 minutes. Transfer apples to bowls. Pour juices from dish into small saucepan. Boil juices until thick enough to coat spoon, about 6 minutes. Spoon sauce over apples. Serve apples warm with vanilla ice cream.

8 Fuji apples
water
white sugar
2 cups fresh raspberries
1 1/2 Tbs. confectioners sugar
1 tsp. grated lemon zest
1/2 cup heavy cream
1 cup superfine sugar

Steps:

  • APPLES: Core apples and peel top half. (Use melon baller to core). Place in baking dish, open end up, with approximately 1/2 inch of water surrounding. Sprinkle sugar inside and on top of the apple. Bake approximately 1 hour at 400F, until tender. Cool and serve warm or room temperature (if done in advance, refrigerate until an hour or more before serving). To serve, place room temperature (or hot) apple on plate and pour raspberry sauce over. Sprinkle with toffee pieces.
  • RASPBERRY CREAM SAUCE: Puree fruit in blender and put through sieve to remove seeds. Combine with sugar, zest and cream. Thin with a little water or a fruity wine if necessary. Seal and refrigerate (for up to two days) until serving.
  • TOFFEE: Preheat oven to 425F. Line baking sheet with parchment paper. Sprinkle sugar in thin layer. Bake for 10 minutes or until golden brown. Remove from oven and allow to cool completely on baking sheet. When cool break into pieces and remove from sheet.

1 teaspoon cinnamon
½ teaspoon nutmeg
4 apples
1 sheet puff pastry
2 tablespoons toffee sauce
1 egg, for egg wash
brown sugar
cinnamon
vanilla ice cream
toffee sauce

Steps:

  • Preheat oven to 375°F (190°C ).
  • In a small saucepan, cook the apple, brown sugar, cinnamon, and nutmeg over a medium-low heat until softened.
  • Cut three thin strips on a chilled sheet of puff pastry.
  • Cut two of the strips into four and make a small lattice pattern with them. Repeat to make three more lattices.
