3 green onions, chopped
2 garlic cloves, minced
1 carrot, grated
1/2 cup water chestnut, chopped
2 tablespoons soy sauce
1 tablespoon cornstarch

1 teaspoon sesame oil
1/2 teaspoon pepper
12 egg roll wraps, large size - 5 1/2-inch
1 teaspoon vegetable oil

Steps:

  • Preheat oven to 375*. In a non-stick pan, cook the pork over "medium-high" heat, breaking up with a spoon, until no longer pink. This should take about 5 minutes. Drain off the fat.
  • Add the onions, garlic, carrot and water chestnuts, cooking over "medium" heat until the onions are soft, about 3 minutes.
  • In a small bowl, whisk the soy sauce, cornstarch, water, sesame oil & pepper together. Pour over cooked mixture, stirring to mix. Let cool slightly.

1 cup Simply Potatoes Traditional Mashed Potatoes
8 slices bacon, cooked and crumbled

3 large eggs
2 Tbsp water or milk
1 Tbsp vegetable oil
2 scallions, white and green parts, thinly sliced on the diagonal
1/4 c grated carrot
1/4 c finely chopped mushroom (optional)
1/2 tsp minced fresh ginger
1/2 tsp minced garlic
1/4 tsp red chili flakes
1 c cooked, finely chopped chicken or pork
1/4 c hoisin sauce (Oriental section of grocery)
1 c cooked brown or white rice
8 - 10 egg roll wrappers (produce section of grocery)
1 large egg
1 Tbsp water

Steps:

  • 1. Preheat oven to 400 degrees F. Spray a baking sheet with non-stick cooking spray. In a small sauté pan, sprayed with non-stick cooking spray, scramble 3 eggs with 2 tablespoons of water or milk, set aside.
  • 2. Over medium heat, in a medium sauté pan, heat oil, add scallions, carrots, mushrooms, ginger, garlic and chili pepper flakes. Saute until carrots have softened, but not brown, approximately 5 minutes.
  • 3. Add chicken or pork and heat for 2 - 3 minutes. Add hoisin sauce, stir well and heat for 1 - 2 minutes longer. Remove from heat and cool slightly.
  • 4. Place an egg roll wrapper on a cooking board with a corner pointing towards you. With a finger, wet the outer edges of wrapper. About a third of the way up wrapper, spread a small portion of the scrambled egg, the meat mixture and the rice. Pull corner closet to you, up and over the mixture, fold in the sides and continue to roll, ending with the final point facing downward on the baking sheet.
  • 5. Finish preparing all the rolls, place on baking sheet and brush each with egg wash. Bake for 20 to 25 minutes until golden brown. Serve with Hot Mustard Sauce or a Sweet Chili Sauce.

Steps:

  • Preheat oven to 400°F.
  • Heat oil in a wok or large pan over medium-high heat. Add coleslaw, green onions, bean sprouts, wine, oyster sauce, soy sauce, and shrimp. Stir-fry for about 2 minutes, until cabbage is wilted. Mix cornstarch with 1 tablespoons cold water and add. Stir for about 1 minute, until sauce is thickened.

1 egg

8 sticks of cheese, approx. 3" long by 1/4" square (or a chunk of cheddar cheese sliced width wise from a bar of cheddar.)
8-10 Egg Roll Wrappers

Steps:

  • Combine cooled mashed potatoes, bacon bits, green onions, egg, onion powder, garlic powder in a large bowl and shredded cheese if you are substituting for string cheese). Mix until well combined. Wrap about 3 tablespoons of the mashed potato mixture around each stick of cheese (or you could put in a cup of shredded cheddar into the mixture, or a chunk of cheddar instead of string cheese) trying to ensure it is completely covered (this helps prevent leaks). 1 tablespoon oil
2 tablespoons shallots, chopped
2/3 cup baby carrots, grated
1 lb ground chicken breast
1 1/2 tablespoons Hidden Valley Original Ranch Seasoning Mix
1 1/2 tablespoons soy sauce
1 teaspoon fresh ginger, grated
1 large garlic clove, mashed
1 tablespoon white wine
2 teaspoons cornstarch
1 teaspoon sugar
2 green onions, chopped
4 ounces fresh spinach, chopped
20 egg roll wraps
nonstick cooking spray
1/2 cup plain Greek yogurt
2 tablespoons sour cream
1 tablespoon soy sauce
2 tablespoons plum sauce
1 tablespoon Hidden Valley Original Ranch Seasoning Mix

Steps:

  • In a large skillet over medium heat, saute for 2 minutes shallots and baby carrots, stirring often. Add chicken breast, Hidden Valley Ranch Original Seasoning Mix, soy sauce, ginger, garlic, white wine, corn starch and sugar. Stirring often cook this mixture for about 7 to 8 minutes. Remove from heat and stir in green onions and spinach. Set aside to cool completely. This could be made the day or morning before.
  • Preheat oven to 400 degrees.
  • On the Egg Roll Wrapper package there is a diagram and instructions on how to assemble. If that isn't handy, here is my best description:.
  • 1) Take one wrapper and place it on a work surface in front of you with one corner facing you.
  • 2) In the middle put 1/4 cup of the cooled filling. Pull up the bottom corner and cover filling completely.
  • 3) Bring both sides in to the middle. Wet the remaining end with water, using your finger and roll the roll forward towards the wet end and seal.
  • 4) Place seam side down on a non stick sprayed baking sheet. Continue until all filling is used.
  • Spray all the tops with non stick spray. Bake for 15-20 minutes until nicely browned.
  • Mix sauce ingredients in a small bowl and dip, eat, dip, eat.
  • Delicious!

1 egg
8 ounces reduced-fat cream cheese
1/2 cup reduced-fat cheddar cheese, shredded
6 jalapenos, seeded and diced
2 green onions, sliced
4 slices bacon, cooked and crumbled
1/4 teaspoon garlic powder
kosher salt
black pepper

Steps:

  • Preheat oven to 400 degrees. Spray a non-stick baking sheet with cooking spray.
  • In a bowl, combine cream cheese, shredded cheese, diced jalapenos, sliced green onions, crumbled bacon, and spices. Stir well to combine.
  • Beat an egg with 1 T water to make an egg wash. Take an egg roll wrapper and place it on a work surface on the diagonal. Brush all 4 edges with egg wash. Use about 1-2 Tablespoons (depending on how big you want to make them) of jalapeno cheese mixture and place it in the center of egg roll wrapper. Roll up the lower corner around the mixture, fold in the left side, fold in the right side, and roll it over to the top corner. Lay them seam side down on prepared baking sheet. Brush the tops with egg wash and sprinkle with garlic powder and finely shredded cheese.
  • Bake 12-14 minutes.

2/3 cup coarsely chopped celery
2/3 cup coarsely chopped carrot
2 cups shredded cabbage
1/2 teaspoon vegetable oil
2/3 cup chopped onion
1/2 teaspoon minced peeled fresh ginger
1 garlic clove, minced
1/2 lb ground turkey breast
1 1/2 tablespoons low sodium soy sauce
1/4 teaspoon black pepper
14 egg roll wraps
1 large egg white
cooking spray
3/4 cup low sodium soy sauce
6 tablespoons rice vinegar
2 tablespoons dark sesame oil
1 tablespoon minced peeled fresh ginger
1/3 cup thinly sliced green onion (optional)

Steps:

  • Combine celery and carrot in food processor, and pulse 10 times or until finely chopped.
  • Combine celery mixture and cabbage in a medium bowl. Cover with plastic wrap; vent. Microwave at high 5 minutes; drain.
  • Heat vegetable oil in a large nonstick skillet over medium-high heat. Add onion, 1/2 teaspoon ginger, and garlic; sauté 2 minutes. Add turkey; cook 5 minutes. Remove from heat; stir in cabbage mixture, 1 1/2 tablespoons soy sauce, and pepper. Cover and chill 15 minutes.
  • Place 1 egg roll wrapper at a time onto work surface with 1 corner pointing toward you (wrapper should look like a diamond). Trim 1 inch off right and left corners of wrapper. Spoon 3 tablespoons turkey filling into center of wrapper. Fold lower corner of egg roll wrapper over filling. Fold in trimmed corners. Steps:

  • In nonstick skillet, cook pork over medium-high heat, breaking up with spoon, until no longer pink, about 5 minutes; drain off fat. Add onions, garlic, bean sprouts, carrot, water chestnuts and ginger; cook over medium heat until onions are softened, 3 minutes.
  • In small bowl, whisk together soy sauce, cornstarch, 1 tbsp water, sesame oil and pepper; pour into pan and toss well. Let cool slightly.

I wanted to make egg rolls for my hubby and me but I don't own a deep fryer and to be healthier I wanted to bake my egg rolls rather than fry them. I adapted the recipe "Awesome Egg Rolls", Recipe #8674 to be baked rather than fried. This recipe is very simple, and in my opinion fail proof. These egg rolls are delicious, and crispy like restaurant egg rolls, but with out all of the grease. I hope you enjoy this healthier alternative to the traditional fried egg rolls.

1 lb lean ground beef
1 (10 ounce) package shredded cabbage
1 carrot (grated)
salt and pepper
garlic powder
20 -30 egg roll wraps
1 egg
pam nonstick cooking spray

Steps:

  • Preheat oven to 425 degrees.
  • Brown ground beef with salt, pepper and garlic powder. Use a lot of salt, pepper and garlic powder because the flavors will decrease when the meat is mixed with the cabbage and carrots.
  • After browning meat and getting the seasoning to the right taste (try the meat to see if it has enough flavor) place the cabbage and carrots in a very large mixing bowl.
  • Add the ground beef on top of the veggies.
  • Mix well and allow to sit for about 15 minutes. This step allows the cabbage to soften for easier rolling and lets the flavors mix.
  • Taste the cabbage and see if the flavoring is still strong enough. Add more salt, pepper and garlic powder until you get a taste you enjoy.
  • Crack the egg into a small bowl to make an egg wash to use when sealing the egg rolls.
  • Place 1-2 Tbs (more or less for easy rolling of egg rolls) of cabbage/meat mixture onto each egg roll wrap.
  • Fold egg roll wrap according to directions on package being sure to wrap them tightly.
  • Brush egg wash onto wrap while folding to seal the egg rolls.
  • Place egg rolls onto cookie baking sheet.
  • Spray egg rolls with PAM. Use enough PAM to give egg rolls a nice shine.
  • Flip egg rolls over and spray all sides well.
  • Place egg rolls in oven and bake for 15 minutes Egg rolls should be blond in color and crispy. Do not let egg rolls get too dark.
