2 medium carrots, roughly chopped
2 stalks celery, roughly chopped
1 red onion, roughly chopped
5 cloves garlic, roughly chopped
3 tablespoons curry powder
2 tablespoons ground turmeric
2 bay leaves
4 cups chicken stock
5 sprigs thyme
2 tablespoons canola or rice bran oil
1 (3-pound) cod fillet (from the thickest part of the fillet), cut into 5-ounce pieces
1 1/2 cups basmati rice
1/4 cup raisins

  • Melt the butter in a medium saucepan set over medium heat. Add the carrots, celery, onion, and garlic and cook until the vegetables are softened; a little browning is okay.
