Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

1 cup fine semolina
2 cups milk or 2 cups half-and-half (Milk and water)
2 small ripe bananas, mashed
1 cup sugar (or to taste- I use less around 3/4th cup)
1/2 cup raisins
3 cardamom powder
3 tablespoons clarified butter (ghee, cannot substitute this with anything else in my humble opinion)

Steps:

  • Roast the semolina in the clarified butter for 10 mins till golden brown.
  • Then add 2 cups of milk/ half and half.
  • When cooked add the mashed bananas and the sugar.
  • Then when the mixture is almost dry, add the cardamoms and raisins.
  • Serve hot or cold.

Tips:

  • To make the banana and semolina pudding, be sure to use ripe bananas. This will give the pudding a sweeter and more intense banana flavor.
  • If you don't have cardamom powder, you can substitute ground cinnamon or nutmeg.
  • To make the pudding ahead of time, simply prepare it according to the recipe and then refrigerate it for up to 3 days. When you're ready to serve, reheat the pudding in a saucepan over medium heat until warmed through.
  • This pudding can also be served cold. If you prefer a cold pudding, simply refrigerate it for at least 3 hours before serving.
  • To make a vegan version of this pudding, use almond milk or soy milk instead of regular milk, and use vegan butter instead of regular butter.
  • For a richer pudding, use heavy cream instead of milk.
  • To add a little extra flavor, try adding a teaspoon of vanilla extract or almond extract to the pudding.
  • Garnish the pudding with chopped nuts, fresh fruit, or a dollop of whipped cream before serving.

Conclusion:

Banana and semolina pudding is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up ripe bananas, and it can be served warm or cold. This pudding is also a good source of fiber and potassium. So next time you're looking for a simple and satisfying dessert, give banana and semolina pudding a try.
